Super easy BBQ beef
Have a smoker and want to try some BBQ beef? Everyone loves the idea of brisket, but it is too expensive a cut, and not easy to get right. Here's an alternative that costs about £10/kg and makes a great meal. Choose a roasting beef side. These are meant to slow cook in the oven and have some decent marbling, but are not as rich as brisket. Cut off the strings (they are sold rolled) and open up. Place on a hot flaming grill and turn frequently till browned all over. Don't worry if the fat catches a bit. Place in a foil tin on some baking paper. Season with herb salt (try* amzn.to/3RSIGhh ) and a BBQ rub all over (try* amzn.to/3Wd5YB9 ). Add a small glass of water in the tin at this point. Wrap in a good deal of foil and place in the BBQ for a minimum of 3 hours, starting at 180 and dropping to a steady 150 Celsius. When you open the foil wrap, place on the fire to harden the bark and bake in the taste of the rub. This dish goes great with some orzo pasta. I do agree with you on that one...
You have to remove that black section along the backbone once you've removed the guts. Otherwise, this will taint the meat flavor. Scrape out with a spoon until all blackness is removed.

I'll have to try this. My grandparents are from greece and my g'mother,mom,aunts all make something like this called skordalia(I think). Its is the best thing in the world to eat with fried fish. It's creamier than this and sometimes(if my aunt made it) it would have a greenish tint to it from all the garlic. It's one of my fav Greek foods. I'll have to try this.
yes, this is skordalia. It is the potato version, you can also make it with walnuts and bread. What you mention sounds like the bread one.
