Greek Easter Cookies

  • Traditional Easter Cookies from ioannina. In this video I am using my favorite KitchenAid whisk, to get your own* visit amzn.to/4dqAb5Y . You will need 5 eggs, 250gr sugar, 120gr butter, 15gr ammonia (make sure to get the food grade one, not some strange lab one!), vanilla essence or flavoring, one large orange and 500gr of plain flour. Beat the sugar with the eggs, add the butter. Mix the ammonia with the juice of the orange and add to the eggs. Then fold in the flour and mix till you have a consistent mix. Let it rest a bit (and refrigerate if your kitchen is too hot) and place in a piping bag. Form circles on a baking sheet and leave a lot of space around as they puff a lot. Bake at 200 Celsius for 10' roughly or till puffed and golden. Let cool and enjoy. The cookies are super light and crumbly, usually eaten on Easter Sunday.
