Greek orange cake with syrup

  • Orange Cake (portokalopita) is a super popular dessert in Greece. This is an easy recipe (without filo pastry) for a moist syrupy cake. I recommend* using a nice silicone spatula to prepare this mix, like the one one amzn.to/3R0BnT2 . Method and ingredients: You will need 2 oranges. Start with grating the zest of one, and then peel and thinly chop the rest. Keep everything (juice included) in a big bowl. Add a mug of brown/demerara sugar (200gr) and 1 teaspoon each of ground cinnamon and ginger. Add 3 teaspoons of vegetable oil and 3 eggs. Incorporate 2 mugs of self-raising flour in stages (300gr). Zest one lemon and add ½ teaspoon baking powder. Add a small pot of yogurt (125gr). Pour the mixture in a well buttered and floured pan and bake at 180 degrees Celsius for an hour. For the syrup boil together 1/3 sugar and 2/3 water and the juice of half a lemon (100ml water, 50gr sugar roughly) and set aside to cool. Once the cake comes out of the oven, pour the syrup over it slowly. Let the cake cool and absorb the syrup before serving. Serving suggestion: cut a large piece and warm it up in a pan with a bit of butter. Once it gets a bit of a crust serve with some ice cream or crème fraiche.
