  • How to make a fantastic feta and greens Greek pie without filo pastry (batsaria / μπατσαριά) with cheap ingredients you can find at any supermarket! If you would like a whisk with the scraper, like the one I am using see amzn.to/3WdLpRN
    Ingredients: 200gr curly kale, 500gr spring greens (a kind of cabbage) or you can use savoy or green cabbage, 100gr spinach, 4 onions, salt & pepper, soup spoon of dill, 150ml olive oil, 300ml milk, 200gr self-rising flour, 2 eggs, 400gr feta cheese.
    Method: 1) Wash well the kale, chopped cabbage and spinach, 2) wilt the kale and greens with some salt over medium heat for 15 minutes and let drain in a sieve adding the spinach, 3) shallow fry the chopped onions with olive oil in a pan for 10 minutes, 4) add the greens to the browned onions and add pepper and the dill, cook over medium heat for 20’, once done set aside to cool a bit, 5) prepare the pie base mix, mixing the milk, flour, 50ml olive oil, teaspoon of salt and pepper and the eggs (it is a loose pancake-like mixture), 6) oil well a large oven tray and pour 2/3 of the base mixture, then cook in 200 degrees Celsius for 20 minutes, 7) crumble the feta, 8) once the base is partly cooked, layer the greens and the feta, top with the remaining mixture and sprinkle some olive oil, 9) cook for another 40 minutes, 10) leave to cool a bit and then serve!
