How to make Youvetsi

  • Learn how to make youvetsi, a stunning Greek beef and tomato dish served with orzo pasta. Method and ingredients: 1kg beef brisket, cut in large chunks. Melt 50gr of butter in a pressure cooker and brown the meat all over (about 4’ per side). Chop 5 onions and brown in the same pot the meat was in. Add 4 cloves of garlic. Return the meat in the pot adding a pint of water and set the pressure cooker to boil for 30’. While the meat is cooking prepare the sauce. 100gr tomato puree, 1 soupspoon of salt, ½ teaspoon black pepper, ½ teaspoon mild paprika, 1/3 teaspoon cinnamon, 2 soupspoons of olive oil, 3 bay leaves, mixed together. After the meat has cooked, open the cooker, add another pint of water and add the tomato mix. Set the pressure cooker to boil for another 30’ at a lower intensity than before. In the meantime, prepare the pasta. Set to boil 500gr orzo pasta at 2’ less than indicated cooking time on the label. Return the cooked pasta to a new oven going dish. Add the meat and enough sauce to coat the pasta without overwhelming it. Add some additional sauce on top and crumble 100gr feta as a top layer. Place in a hot oven for 20’ to melt the feta and build a crust. Ready to enjoy.
