    For the meatballs: Mash a crust-less loaf of brown bread with two cups of water, till you get a smooth mix. Add an egg, garlic, salt, pepper, paprika, oregano and olive oil. Quantities are dependent on your overall balance of ingredients (see video). Add 1kg of 5% beef mince. Mix till consistent and refrigerate for an hour. Oil your hands and roll the meatballs (2 inches in diameter). Fry the meatballs on a dry non-stick pan, turning them over till thoroughly cooked.
    For the potatoes: Peel 2kg potatoes and cut them as if you are making thick-cup chips. Add salt, pepper, paprika, oregano, the juice of 1 large lemon and olive oil. Mix well and cook at 180C on a non stick oven dish (or on some baking paper) for 30'. Take out, mix well and cook for another 30'.
    For the tzatziki: Grate a whole cucumber (do not peel it). Salt the cucumber and leave it in a sieve to drain its liquids. Mash 3-4 cloves of garlic with some salt. After an hour, mix the cucumber with the garlic and add yogurt (preferably Greek-style), some olive oil and mix well. Leave in the fridge for an hour before consuming. Sprinkle some dill on top if you have it.
