- Traditional Greek syrupy walnut cake. Ingredients: 6 eggs, 1/2 cup sugar (mixed brown & white), 1/4 plain flour, 1 cup semolina, 1 teaspoon baking powder, 1/2 teaspoon cinnamon & equal amount of ground cloves, 1/4 cup cocoa powder, 1 cup chopped walnuts, 1/2 cup veggie oil. Please note, I am using a standard sized coffee mug for my 'cup' measurements. Method: Beat eggs with sugar & add dry ingredients, with the walnuts and oil towards the end. Bake in a well oiled and floured cake tin for 30' at 180 Celsius. While the cake is cooking make the syrup by boiling together 1 cup sugar with 1 cup water and the juice of half a lemon. Let cool and pour slowly over the warm cake once it is out. Let cool completely and enjoy. It goes great with some cream or ice-cream and can keep in the fridge for 4-5 days.

could the semolina be swapped out for flour?
