  • Oat milk is a delicious, dairy-free milk that is crazy easy to make. It's nut-free, low in fat, very affordable and comes together in just minutes. Let me show you the best way to make rich and creamy homemade oat milk (that is NOT slimy!) PLUS I'll show you how to make my oatmeal pulp chocolate chip cookies!
    Oat milk has been gaining in popularity lately and for good reason. It's rich, creamy, and delicious PLUS it's a plant based, nut-free alternative to milk.
    It's also a relatively inexpensive milk to make and you don't need any fancy equipment to make it. And my absolute favorite thing about homemade oat milk?? You can make oatmeal chocolate chip cookies with the leftover oat pulp. #SoGood

    OAT MILK RECIPE
    1 cup rolled oats
    4 cups filtered water
    1 teaspoon vanilla extract
    1 tablespoon maple syrup
    1 pinch kosher salt
    INSTRUCTIONS
    Add the oats and water to a high-speed blender (or any blender you have) and blend until the oats have broken down and the liquid looks creamy, about 30 seconds to a minute. Do not blend more than needed or the oat milk will get slimy.
    Add the vanilla, salt, and maple syrup. Blend for an additional 3-5 seconds.
    Pour the liquid through a nut bag or over a fine mesh strainer. Gently pull the bag up and let the milk drip through.
    Allow the milk to strain through at its own pace. If you try to squish or push the milk through, the milk will get slimy.
    Store in an airtight container in your fridge for up to 5 days.

    OAT PULP COOKIE RECIPE
    1 cup almond butter, all natural, creamy + unsalted
    3/4 cup monk fruit, or preferred granulated sweetener
    1 egg
    1 teaspoon vanilla
    1 teaspoon baking soda
    1 teaspoon kosher salt
    1/3 cup oat pulp, leftover from oat milk
    3/4 cup chocolate chips
    INSTRUCTIONS
    Pre-heat oven to 350F + line a rimed baking sheet with parchment paper or a silpat mat.
    Start with a new jar of room temperature almond butter (or make your own). Be sure to stir any oil that pools at the top back into the almond butter. You want the almond butter to be smooth, creamy and almost pourable.
    In a large bowl, combine almond butter, monk fruit, egg, oat pulp, vanilla, baking soda and salt. Stir everything together until you have nice thick cookie dough.
    Add in chocolate chips and gently stir so they are evenly distributed throughout the batter.
    Scoop up about a tablespoon of the batter and drop it on a prepared baking sheet. Repeat until you have used all the dough. You will need to work in batches or use two baking sheets.
    Bake for 12 minutes or until golden brown on top. Cool completely before removing from the baking sheet. They are very delicate when hot, so this is an important step. Enjoy!
    NOTES
    *Monk fruit is a plant-derived, calorie free sweetener. This is the one I am using. If you prefer, you can use coconut sugar or really any granulated sugar in its place. Coconut sugar and turbinado sugar are two of my favorites.

      This might sound weird, but I like to use the pulp for a face mask! Oats add moisture to dry skin and can be very soothing. Try it, you might like it! Besides, it smells great!

    Thanks for these double use recipes! We’re having a hard time getting grocery deliveries to our house. (All delivery times are full) We’ve stopped going to the store as well for the next month.     I always use oat milk for my homemade protein bars..., that's also where the oat pulp ends up, lol. I was so happy you did not just throw it away like some people do, really.

    i just did banana oat pancake using the pulp. sedap! 😊 an egg, the oat pulp, a banana, a tbsp of sugar, dash of salt. and a teaspoon of vege oil (too make the pancake look beautiful 😝) Adjust the batter by adding oat milk or oat flour (i just blend the oat 😀)

    I make oat milk from soaked steel cuts and rolled oats. I use a vita mix and blend on high for 2 minutes. We love it. It seems to be the same as any other oat milk. Thankyou. Great work.👍

    I read if you want to heat up the oat milk you need to add some kind of fat. like coconut oil or soaked cashews. It turns it into a more barista type oat milk. Oats are starchy hence the slime and thickening. I buy one called Earths Own. It is a Barista kind. I can heat it up and use my little hand frother and make amazing lattes. So darn good. Thank you Dani for all your amazing videos. I have been following you for a very long time. And I must say your children are adorable. Cheers to Oat milk.

    Ok... feedback liked the oatmilk, LOOVED the cookies! Changed the almond butter for organic chunky peanut butter because I ran out of the other butter but it was still amazing and the bits of nuts made it really nice and I must say that the monk fruit did blend very well and my kids and husband are loving these cookies.     I made the milk and the cookies but I used ground dates instead of the monk fruit they were awesome! My son hates eating sugar in cookies so this was a hit for his healthy gut and I have been staying off sugar for a week except for the birthday cake

    In these days Starbucks and tea shops starts to supply oat milk in Taiwan. I am happy you upload this video. I would like to try to make it soon but it is hard to find rolled oats in shops. People prefer instant oats here. I wil try to find it online or get it from Costco. Thanks!

      You can also use the pulp in the shower as a body scrub or just on your face for a facial scrub. I've also mixed it with used coffee grinds in the shower. It works!!

    Because of tree nut allergies, I used mostly Sunflower nut butter and added peanut butter. I also didn't have enough of the classic Monk Fruit sweetener and added the Monk Fruit brown sugar to make up the difference. The cookies were still delicious. And yes, we made the Oat milk ( not bad, will make it again) and strained so we could add the pulp to the cookies. The only downside, if you can call it that was the straining process with the nut bag. I have some carpal tunnel so it took a while.

      Maybe next time try a fine mesh strainer.... it may be easier on your wrists. Just don't push milk through with a spoon, let it drip at its own pace.

      @Healing Hands Here is my Coconut Recipe ... and before I give it to you, I know that many, many people swear by using very hot water or boiling water for this but trust me, there is ZERO difference in taste... but you try it and see what you think! Here we go: 2 cups coconut shreds. About 4 cups water ( I fill my Vita Mix 3.4 of the way up) pinch of Himalayan Salt or any salt of choice. A pinch of cinnamon (sometimes I use Nutmeg), 1 tsp Vanilla Extract. IF YOU ARE GOING TO USE HOT/BOILING HOT WATER, REMOVE THE SMALL CAP FROM THE LID OF THE VITAMIX AND USE A HAND-TOWEL OR PAPER TOWEL FOR THE TOP. Turn on Blender, slowly increase speed to full power and let run for exactly 3 minutes.. just 3.. trust me on this one.
      Pour out your milk into a nutbag or some type of strainer.I personally have my paint strainer fitted over a colander that stands in a bowl, then I gently squeeze until all of the milk has come out.
      Then, I actually add the pulp BACK INTO the blender, add about 2 more cups of water. Blend it again, then repeat step 1.I do this because it makes my coconut stretch longer ( I get more out of it), and, you can use the coconut pulp for bread or for some other dish OR, you can dry it the oven and make coconut flour out of it, which I have done but it is alot of work. Also, I use the pulp in my smoothies.... you can freeze the pulp! I place my coconut milk in large mason jars and the milk lasts 7-10 days. Not for me because I drink it all but it can last that long without going bad. This milk is BOMB in oatmeal (Irish Steele Cut) .... if anyone tries it let me know what you think :))
      By the way, BOB'S RED MILL SELLS IT IN BULK. I have gone in with someone before, splitting the cost because let's face it, I am not going to drink 50 pounds of Coconut Milk in a week. But, it does save some $$$ for anyone looking to make your pennies stretch of for those on a fixed income.....I like Bob's because he has no sulfites in his brand.....!

I started making the milk because i have Lupus and RA.... and I just love it! Also, if you cannot afford Bob's Red Mill and don't mind Sulfites.. WINCO sells Bulk Coconut and also Tropical Traditions. They are in the Philipines and I love that company. Family-owned.... :))

    I am so happy that you made this video. My son has soy, nut and cows milk allergies. We buy Oatly Oat Milk and now I can make my own. It seemed so easy. For the cookies is there a substitute for the almond butter?

    I like the recipe, but I would suggest that if you don't have something like a Vitamix to put in less water. I'm going to use 3 cups of water next time since my milk came out having good flavor, but tasted watered down. This will still become a staple for me though!
