  • Went to the Nam Dae Mun Farmers Market and brought home a Freshwater Drum (Gasper Goo). I have heard this fish has an interesting texture. More meaty then fishy. It's also called poor mans lobster. I cheffed it up and it was pretty good! I reccomend trying if if you can!

      Hahaha. I think some might think the buyer thinks he can do a better job cleaning the fish. I just tell them I eat the guts and watch the reaction.

    Up north a little, what we refer to as "poor man's lobster" is more in how it's cooked, rather than the fish variety. Basically, any firm white fish, especially monkfish, boiled in water, sugar and vinegar is poor man's lobster. Keep up the good work!

      We always called Burbot poor man's lobster growing up in Minnesota. I loved catching them. I live in Florida now so I am 99% saltwater but still get up to Minnesota in the summers to fish.

    My mother used to broil monk fish with a little paprika, back when no one knew what that was, and served it with drawn butter and lemon.
    what I normally do for "poor man's lobster" is fill a good sized pot 3/4
    bring it to a boil, then add 1 cup sugar and a 1/2 lemon. (the lemon firms up the texture, so don't go crazy)
    when the sugar's dissolved add the pieces of the fish (cut like you did into 1" strips), and bring the heat down a little so you don't overcook.
    the pieces will hang out on the bottom and cook until they float.
    when they float, they're done. again, don't leave them too long, or all the nice oils/moisture will boil out.
    you fish them out and keep them warm until they're all done.
    serve with melted butter and a squeeze of lemon.
    I normally use cod, but I can't wait to try it out on drum!

    When I was a kid, the Ohio Department of Natural Resources had a campaign to get people to eat freshwater drum. They are everywhere, and we always would catch them while fishing for Walleye in Lake Erie. They were giving us samples at the state fair, and the drum tasted good.

    I laughed a little when you said 'chicken fish'. When my kids were little, my Mom would fry up mild white fish and told them it was 'chicken fish' so they'd eat it. And they called fried fish 'chicken fish' for years. Too funny. And great video!

    Thanks buddy, you got me back fishing and cooking again! First time I went out in years a Jamaican kid came by and I helped him fish for the first time. He and his friend took the fish home to eat,. And then the the other day I caught a bluegill and fried it up like you do. I burnt it a little but it was still SO GOOD. Next time I will get it right!     randomly came across this video and im really impressed. The way you dissected that drum. then fed the cat was nice. ive never heard anyone refer to it as poor man's lobster. in Texas most throw them back. I do eat the saltwater versions though.

    As a kid in Louisiana we would catch these all the time. restaurants use to take drum meat and make crab cakes. If you didn't know any better you couldn't tell the difference. Good video

    Man, I had my own foraging adventure today- and it really backfired. We have tons of mulberry trees around where I am, and there's a TON of fruit all over them that's ripe.
    I spent like 20 minutes gathering fruit from our neighbor's tree after asking her for permission, I got so much and was super excited. Then I noticed when I got in that they were absolutely crawling with 'mites'.
    Turns out it's fruit fly larva. I washed them like 6 times, and a lot of the larva is gone, but I'm reluctant to eat it now.

      Man that sucks. My gramma had a mulberry tree in her house when we were growing up, and we loved to climb up and gather fruit. At other times it would be filled with big fat caterpillars, but they were cute bugs.

      My mother grows 3 big mulberry trees in her back yard. When it was time to harvest them she got most of it but she had to travel out. Told me to get the rest of them and I was like 'NOPE'. Way too much effort to try harvest and I don't enjoy the effort to clean and sanitize them just to consume them after frozen. The mulberries didn't have much bugs on them but I still remember the time I ate unwashed/untreated mulberries and my stomach did not like it.

    Really appreciate this videos man. Got into fishing this summer up in Michigan and we have so many freshwater drum in our rivers and I was always told they’re gross and to not even bother eating them. I think I’m gonna go out right now and land a few, thanks again.

      I grew up calling them sheepshead here in Wisconsin. Catch them all the time in our rivers and was told they are garbage and not good eating as well. Think I'm going to have to try the next one I catch too.

    Yo, Mark would you talk about the oil you use for frying or reference when you may have in any prior video? How long do you keep it, what you start off with, storage, etc.? AND, Hey man, PLEASE never let them change you when the conglomerate corporate broadcast engines come to sponsor you. And I believe they will. I really think that they will come to you to expand your channel. Stay who you are, cool, chill, and humble. Don't change a thing about your work here. Your access to affordable fish and products is so helpful. The way that you fish and consider so many of the fish that the other channels would never consider as having any value, or even to be edible. This is education for the layman like myself. It's really fun to see you taking care of the stray cats as well and when you speak Japanese to them, it's just chill to watch. You're literally the only fishing and fish prep show that I watch anymore. THANKS!!!!

    I think we are all in agreement that cheffing it up with mark RULES… lots of love and support in the comments. I did a fish fry in my van the other week, simply because the only thing I’m watching on TH-cam right now is this channel.
    You don’t have to change anything in these videos, keep eating things we might not and inspire us to eat a more varied diet, trying new things with simple technique
