  • I filleted and grilled a yellowtail. Also made some sushi with it (nigiri and sashimi). It was very fatty and delicious! Yellowtail is one of my favorite fish. if y'all get the chance give it a try!

    I've really been enjoying your Channel especially since growing up I was taught that so much edible food is not edible and your videos are proving that so many things are edible and so many different parts of animals are edible. So, you've taught me that just because some parts of animals are inconvenient(takes more effort) or require extra cooking to eat they shouldn't be thrown away.

    I've never been fishing in my entire life. But there is something really satisfying about watching a man explain each fish whilst preparing, cooking and enjoying his food. 😊 peaceful and informative.

    Hey Mark, we catch a lot of Yellowtail (Hamachi) out here in Southern California. I live in Orange County and our boats do well, but San Diego is even better for yellow’s. It’s my second favorite raw fish for sushi or sashimi (Albacore or Binnaga is my favorite). The one you bought was actually very small (I’m guessing around 5 lbs). Out here a 10-15 lbs yellow is considered small. A large yellow will go 25+ and the world record is 114 lbs. I personally will not cook either of these fish because I feel they are a delicacy to be eaten only raw. When I was down in Cabo San Lucas I caught a Striped Marlin and had it both cooked and raw. The sashimi was fantastic and it tasted just like Albacore. The flesh was a little more fiberous and chewy, however. My wife is Filipina and wouldn’t eat raw fish when we married in Japan in 1979… but today it’s her favorite food and she can’t get enough, lol!!! We absolutely adore Yellowtail, the taste, the texture and it just melts in your mouth 😋

    Dude I just want to let you know that you can tell how fresh a fish is by looking at its eyes, the cloudier they are the older they are. Fresh fish will have clear to slightly cloudy eyes. I can guess this works to pick out fresh fish. My entire family uses this method!!💯

    I like you pointed out that farm raised is safer to eat raw than any wild caught fish. Half people don't know even packaged Wild caught fish could contain parasites and isn't safe to eat raw unless it's frozen beforehand to kill said parasites.

      The meat is bloody so its best to bleed the fish out and bake it. Jack crevalle is not a good frying fish, and the mercury content is a lil high.

    Do you get SABA or AJI in Atlanta? Can you do a vid on how to cut salt and dry them?

    Yellowtail nigiri is hands down my favorite. If you can get your hands on some wild caught fresh black sea bass (Cape cod/east coast) It is my favorite cooked fish. Very similar in flavor to yellowtail as in it's not fishy at all.

    when it comes to Sashimi I have to say I do prefer yellowtail or mackerel. Sushi though, Squid or Scallop. Grilled fish is delish and I thing grilled yellowtail pairs best with ponzu sauce

    Hey I’m struggling to find some info on yellowtail. The frozen one you bought and the sashimi are both the same species? But one is clearly from a much bigger fish? Doesn’t that make it buri? And does yellowtail need to be farmer raised for raw, Like salmon?

    Convinced this was the dude on to catch a smuggler. On his way to Hong Kong from South America, but lost his phone and couldn’t pick up the product. Stopped at the airport in the states, spilled the beans and they joked about how slow he was.
    This has to be the same dude. Not sure how the guys in Hong Kong and South America felt about that.
    Maybe I’m wrong, but not likely.

    I love your vids man but I gotta ask, are you not at all concerned about cross contamination? Seems like the outside of that ziploc bag was all over the raw fish and then you just toss it straight in the freezer and contaminate whatever the bag touches? Or like when you touch seasoning pack with the hand you just touched the raw fish with. Idk if its different with fish than with other meats but in a kitchen this is a big no no

      The frozen one's are typically fresher because they haven't been sitting out for days like the thawed ones.

    you look to be very well educated on japanese culture,but when i go tho japanese restaurant on my country is wrong to mix soy sauce and wasabe,i dont know if you are doing this knowing you are wrong but just likes doing it or im just wrong,in the same way people that put oil in the pasta water are wrong.

      If it's shiny and the yes are shrunken in. Even when mackerel isn't super fresh it still tastes pretty good. Alot of times at farmers markets they'll fillet it and salt it and it won't get sold for days and days but still be delicious

      Farm raised fish fish is still fattier and for that reason I like it. We eat small amounts of poison all time. And eventually we all die anyways. Seek the Creator with all your heart and you will find him
