    A lady in rural Alabama told me, that she grinds carp with a meat grinder and doesn't worry about the bones, then she fries them like salmon patties.

      I heard of that as well. Most of the carp fish family are full of those evil bones. That is why we call them "pin cushions" in Switzerland. People who do this make eighter fish balls or fish burger. I tried the vinegar aproach. After two days in the marinade the smallest bones are disolved or soft. But the sour taste is actually not my cup of tea.

    In the 60's/70's in Northern Mississippi, my uncles would catch Cat, Buffalo, and Carp for Saturday fish fries.
    They would catch them either on Friday or early Saturday and used baseball bats in shallow parts of streams to "stun" the fish and catch them by hand (they used the traditional fishing poles too).
    Those Saturdays, watching football/basketball/baseball and just talking were some of my favorite family times of my life.

    I grew up in the Bronx, in the early 1950s. When my mother would cook fish -- bought fresh, at the local seafood store three or four blocks away -- she would generally make a chowder, and there were _always_ bones. We learned to eat fish at a very early age, learned how to pick out the bones as we ate, and it was no big deal at all.
    We live in a very sad time, when people are SO pampered that they cannot even be trained to eat fish! (Can not, or WILL not, doesn't matter which, the result is the same.)

      PS: You should let your poor cat inside! It's what he was trying to do! Cats _belong_ inside. The average lifespan of a cat that is even only _part_ time outdoors is a year and a half.
      _Inside_ cats, though, live about 15 years on average.
      What he wants is to sit on your lap and purr, not to nose around the cold drafty shrubbery outside.

    Thanks for this video Mark. In my opinion, pretty much all fish are good when cooked/prepped correctly, and served hot. Even less desirable ones. You did an awesome spread and variety...kudos to you. It's really more us Americans that turn our noses up at less desirable fish, but most of the rest of the planet will take what they can get and appreciate it and be happy. Great video!

      Not true, bottom feeder fish taste disgusting, I give this guy credit for being able to eat it, no amount of prep, spices, butter or acidity can help it in terms of taste, just thinking about is making me gag.

      @@deejaytrizay Yeah hear alot about fried catfish recipes. Im guessing its because they dont have many bones and have lots of meat. So they're easy to filet?

      @@Erackness1 Correct. They are way less bony than a lot of other fish. Cleaning them isn't my favorite, but it's doable...because we usually skin them as they have no scales. Plenty of meat, but the thing is...where I am from, Louisiana, we prefer the "medium to small" sized ones...about 2-6 lbs. They get way up to 80 or 90+ lbs, but the meat isn't as sweet and kind of tastes dirty.

      I'm one of those snobby Rocky Mountain Rainbow Trout eaters. If it doesn't come from an extremely cold rapid stream that looks like a beer commercial & cooked directly from the water on the fire, I ain't eating it! 🤣 That being said, I still wanna learn how to cook supermarket fish for my hubby, who's seafood love is poorly fed. 🥰🔪🐟

    Common carp caught in winter are far superior to carp caught in summer warm water. As a boy the state would seine the carp from the lakes in our area to preserve the walleye fishery, and give them away to anyone who wanted them. My parents would take washtubs out to the lake and they would fill up the tubs, and we would freeze the filets to eat later, but the fresh carp from very cold water was some of the best fish I ever ate!

      That's probably why Eastern Europeans buy them live and keep them in their bathtubs so get rid of the strong taste. They eat that instead of turkey or roast beef for holiday season.

    Another great video Mark! I’m surprised you haven’t tried Pompano being that you’re a fish eater. I highly recommend you trying it out. It’s on my top ten best tasting fish. Florida is lucky to be able to catch them from the surf. Grilled, steamed, Anyway you cook them they turn out bomb!!!

    Pompano is a fish common in Southern Florida the town Pompano Florida was named because of the abundance of that fish available in the waters.

    Mark Pompano fish taste amazing! I used to eat them all the time in China. They fry them first lightly and then steam them. My wife uses an airfryer these days then let them bake in the oven. We put spicy peppers on it, ginger, cilantro, and Sichuan chili oil. You should experiment with one, with Japanese flavors perhaps.

      very close to the steam fish we would eat here in hawaii, instead of chili oil, I would use a sauce with sesame oil, shoyu and brown sugar and cook with lots of ginger and cilantro and some garlic.

    We have those in WV. I usually catch them in a castnet occasionally. I researched them a while back and they are native to eastern US. Also Buffalo don’t breed until they are about 20 years old and can live over 100 years

    That silver triangular shaped fish at the market is called a lookdown or a moon fish. Those are very tasty fish that are closely related to a pompano.

    Easy way to tell the difference between buffalo and other carps is the cuteness. Buffalos are cute with them big black eyes.

    Any carp style fish or carp fish in general they're good with Asian style cooking ( grill or steam with ginger, scallions and fresh herbs) Great video, keep it up.

    Ey yo Mark, I'm Asian and depending on which group of Asian you talk to, they eat everything lol. However I'm not a fish person unless cook a certain way, if you ever get the chance, try thai catfish red curry in a thai restaurant or if you know some hmong or laos people, try fish laab fish sticky rice. But you got my respect for not wasting the fish and treating every fish with respect. Majority Americans tend to blame the fish for not tasting good instead of their cooking skills, however for being so young and so mature you got my all respect and I wish you and your channel great success.

    Mark! Have you ever tried fried whole fish with a mango salsa as a side? It's pretty good imo
    My variation includes the usual: mango, lemon/lime, serrano or jalapeno, green onion, red onion, a ton of cilantro, pepper
    BUT no salt instead use fish sauce (I only do it this way mostly when eating the salsa with fish). If you can't or don't like to eat cilantro you could use fresh basil and parsley instead

    Pompano is what that fish was in the beginning and it was one of my favorite fish growing up. Just deep fry it in oil as is, dip it in fish sauce and serve with rice.

    Fish at 0:35 is a Lookdown. Looks very similar to the Atlantic Moonfish but they are different species.

    We eat carps all the time here in Vietnam, I am amazed that there are lots of carps in the US but ppl dont like to eat it

      Yea we have a ton in our rivers, and we have a lot of big rivers at least where I'm at in Kansas city. People get mad when they catch a carp by mistake lol I've still never tried one though

    Mark, your content is great. Honestly, man, you have a very cool way of presenting yourself and sharing your knowledge and experience. You make people feel like they can learn what you're teaching. Very cool. I would say if you improved your lighting and sound, and dressed up your settings you could compete with anybody on TH-cam. Then again, I've never made a video, nor do I know anything about cooking or fishing or anything, so take my advice for what it's worth. The only reason I say anything is because I really like what you do and I would love to see you make a ton of money at it.

      i personally think that the way he makes content is perfect. This is because his setup and quality, is a little less than big creators, giving another feeling that is quite rare nowadays.     I used to do tramell netting in the Missouri River. These quillback carpsuckers are one of the most common fish in the river and easy to catch in great numbers with netting. I ground fillets of quillbacks in a meat grinder and fried them in patty form. It was excellent although a fair amount of effort.

    interesting videso for fish lovers. Would like to try this specie myself. There are so many fish species that taste good, and are not known to western cuisine. Fot the Y-Bones we here in Germany use a machine that slices the carp filets every 5 mm, without cutting through the filet, so you are left with a perfect filet where the Y-Bones are so small that they do not bother you any longer. I also think carp is one of the best freshwater specie to eat.

    Carp is delicious but most people don't eat them due to the y-bones.
    Another "trash" fish that is delicious is Sheepshead. They are found all along structure near me in the obx and it's a flaky white meat that seasons up well.

    Really cool video Sir !!! Not to mention your Japanese, also very impressive. I’ve seen some Curries that were made with carp, also carp from a pressure cooker to help with the bones. You will have to make a video with some of your friends trying some of your fish, friends that never have tried of course.

    You should salt your seasoning instead of the fish directly, the salt underneath will pull out water and make the breading fall off easier.

    The thing with carp is that I'm always afraid the vendor are just selling fish caught at the local sewage water contaminated pond in town. Always wanted to try but afraid to buy.

    Carp and red fin Sucker are an excellent source of Omega 3 oils and collagen. Essential nutrients for nerve and brain, bones, joints. The oils give the flavor. Bones/Spine/fins, deep fried then make a broth. Throw in the head,strain out bones/skin is optional. (traditionally left in )Then w/onion potato, fish head soup!

    That fish from the market is called a Lookdown and can be caught in the US lives in shallow brackish water or offshore
