What I Eat in a Day as a Vegan Private Chef | Whole-Food, Plant-Based Meals
Hey everyone! 🌱✨ Join me on a culinary journey through a typical day in my life as a private chef. In this video, I’ll show you how I intuitively create delicious vegan meals without following strict recipes. This is a no-nonsense, straight-to-the-point video where I share exactly what I do, cook, and eat-just pure, real insights into my daily vegan routine.
Breakfast (1 PM):
I kickstart my day after a 12-16 hour fast with a protein-packed breakfast. I whipped up some mouthwatering pancakes featuring chia seeds, banana, olive oil, mulberries, pepitas, coconut sugar, baking powder, water, and local all-purpose flour. To go along with it, I made a vibrant smoothie with wild blueberries, beet powder, spirulina, water, vegan protein, and creatine. 🌞🥞🍹
Lunch:
For lunch, I sautéed tempeh with shaved cauliflower and Brussels sprouts, paired with a fresh salad of cucumber, radicchio, radishes, lettuce, and fermented carrots. It’s all about combining flavors and textures for a satisfying meal. 🥗🥒
Dinner:
Dinner was a cozy, spiced tomato dish featuring tofu, eggplant, onions, garlic, mushrooms, red pepper, kale, and tomatoes, seasoned with turmeric, cinnamon, smoked paprika, and ginger powder. I served this over plain white quinoa for a nourishing end to the day. 🍆🍅🍚
I also talked about some of the vitamins I’m trying and I opened up about my vegan journey, the challenges of giving up meat after 23 years, and how creating new memories with healthier food has transformed my life. 🌿❤️

But I also loved the casualness of this video and the morning to night meals format. I workout 5-6 days a week so I like to see meals with that focus in mind.     This was the best explanation of steaming I have yet seen. It was concise, yet conveyed so much information. Seeing the use of the stainless steel cookware would be a bonus to people who are concerned about plastics or nonstick finishes in their cookware.

I tried Edgar Castrejon’s Pipian recipe from Provecho cookbook and it didn’t turn out that well; so after hearing your explanation I’m going to make it again, similar to what you did, putting it over seared mushrooms, and a few potatoes.     I always see the seeds being removed in other videos due to their bitterness. Do you find that they don't distract from the flavor?

      Hi Yosemite! Thanks for your comment and that’s a great question! In my opinion the seeds are not bitter unless you burn them, you can try them yourself. I think that removing the seeds help texture wise, making sauces creamier. Hope this helps! I’m here if you have any other questions!

      Thank you!! Just add the amount of oil that you preferred. You can bake the last tofu as well just add a little of oil to the mix and then place it in top of a parchment paper! I hope this helps! 😃🙏
