- Pipian verde is a traditional, staple Mexican sauce. Sometimes called green mole, it’s a thick sauce based on pumpkin seeds and tomatillos. I'm showing you how to make a 100% vegan version of it, because this is a sauce you have to know how to make!
You can serve this pipian with tofu, grilled/roasted/steamed vegetables, rice, mushrooms, tempeh, or any soy protein of choice.

I tried Edgar Castrejon’s Pipian recipe from Provecho cookbook and it didn’t turn out that well; so after hearing your explanation I’m going to make it again, similar to what you did, putting it over seared mushrooms, and a few potatoes. I like your comments about the versatility of this sauce!

This looks wonderful! Can't wait to try it! I always thought Mole sauce had chocolate and a variety of peppers! Obviously that would not be Mole Verde. What would it be called?

One of the moles that contains chocolate is Mole poblano from Puebla.
Also my grandma used to put chocolate in her mole instead of sugar and most of the time moles are made with dried chiles except for Mole Verde/ Pipián verde.
