Moist Spelt Zucchini Muffins with a cafe-style muffin top
A delicious spelt muffin recipe that stays soft and moist for days. Made with spelt flour, spices and freshly grated zucchini are delicious. I used a combination of white spelt flour and wholegrain spelt flour but feel free to mix and match what you have in your cupboard. And there are a few extras added in for texture, raisins and walnuts. You could be creative and add your twist and use sultanas, dates, chocolate chips, or any other seeds or nuts. Watch my video to see the step-by-step guide on how to make these muffins. Then with bonus tips on how to make the perfect domed shape muffin top, like you see in cafes.

Remember to preheated oven 220˚C/ 200˚C fan or 430˚F/ 390˚F fan
00:20 whisk dry ingredients (not the sugars)
01:20 wet ingredients including sugars, eggs, oil, vanilla and mix
02:37 add in grated zucchini (not need to blot)
03:15 add in extras raisins and chopped nuts
03:40 add in flour to the wet mixture
04:08 add to muffin tin fill to the top
04:39 bake 5 minutes high to get a muffin top 200˚ C fan or 390˚F fan
05:00 lower the oven temperature to 180˚C fan or 360˚C fan and bake for another 11-13 minutes
05:15 after 11 minutes check if they are cooked with a skewer if it comes out clean they are ready
cool in the tray for 10 minutes

* White Spelt flour - 150g, 5.3 oz white (1 cup)
* Wholegrain spelt flour - 70g, 2.5 oz (3/4 cup)
* Baking powder - 1 ts
* Baking soda (bicarb) - 1/2 ts
* Ground cinnamon - 2 teaspoon
* Ground ginger - 1/2 ts
* Nutmeg - 1/4 ts
* White sugar - 120g, 4.2 oz (1/2 cup)
* Brown sugar - 65g, 2.3 oz (1/3 cup)
* Large eggs - 2
* Oil, rapeseed, coconut or vege - 4.2 oz (1/2 cup)
* Vanilla extract - 1ts
* Milk, soya or your choice - 3 tablespoons
* Shredded zucchini, skin on ok, 1 medium size - 210g, 7.4 oz (1 +3/4 cup)
* Extras - raisins - 100g, 3.5 oz (1/2 cup)
* Walnuts, toasted and chopped - 30g, 1.1 oz (1/4 cup)

I don't use baking powder or baking soda. Is there a recipe without those ingredients?
Yes as mentioned during my video at 4:31 you can add 2 tsp if dry yeast instead of baking powder. I have discovered since then warmer the water the easier it is to make into balls.

Could you swap the sorghum flour for something else? I believe sorghum is a grass of sorts and people with allergies to grass should be careful with using it. Could be perfectly fine, but I don't feel like utmana ödet...
Buckwheat or Sorghum flour. Can be substituted for oat, or millet flour.

How can it be gluten free when you used glutinous rice flour?
Good question! I should have mentioned...Also known as Mochiko Flour (Glutinous Rice Flour) - contrary to the name, glutinous rice flour has no gluten and is gluten-free.
@@SueMareeP okay so if all rice flours are gluten free how is the glutinous rice flour different to the others, and why can't you use 'normal' rice flour in this recipe?
Can I swap Glutinous Rice Flour (sweet rice flour) with regular white rice flour? No, rice flour and glutinous rice flour should not be used interchangeably. The flours have very different textures, cook very differently and yield very different results. So, sweet rice flour is definitely not the same ingredient as regular white rice flour that is available in most supermarkets.

Hi Sue, I made this lemon cake yesterday for the first time, it was light and delicious Ial most halved the sugar to I used 130g and I will make again but will use less oil not sure how much but most probably to 120g . I haven't been happy with my 100% buckwheat flour bread rolls. I still need to perfect my recipe. I have never tried or seen crescent rolls, I will do some research and see what they are. Are they like croissants?

Thank you for sharing. I just had my first veganiversary last month lol. I'm still experimenting. I'm gluten intolerant and just bought some buckwheat flour but not used it yet.
You are so welcome! Well done. Oh that’s hard to start with but I am sure you’ll notice the difference very soon.
250g sugar is still a lot. I would cut that down to 100g max. That may sound too little for many, but people really need to use less, sugar, they'd soon get used to the taste of having less. It's the same with salt. I cut mine right down, and now all the unhealthy things I used to enjoy such as shop-bought meat pies and sausages, I can't eat because they taste far too salty, so now I make my own, much healthier ones😋
Yes it is always a good idea to be as healthy as possible and reduce salt and sugar. I must test this recipe again with your suggestion. Sometimes it’s a fine line between keeping the balance of taste and texture. I do have complaints from my family with I reduce the sugar too much! 🤷🏼♀️😀☺️🤔

I have not found any information on why. I am assuming it helps not puff up and have bubbles when baking. It is also ‘the look’ of this bread. Once my Swedish is better I will ask a local. 🤔😀
Different side has different type of holes depending on how much butter you want. Bigger and more holes = more butter.

No, you don’t need to worry. I can’t bite really hard food and can eat this toasted. So I think you’ll be okay. I always find sourdough breads much harder to bite into. Give it a go!
