  • Wholemeal Spelt Oat Bread: no dairy, perfect for lactose-free and wheat-intolerant diets.
    My new recipe combines the nutty sweetness of wholemeal spelt flour with the creaminess of oats in this healthy loaf bread. This spelt bread is surprisingly light and soft, even though it has lots of grains and fibre which is fantastic for your health. Spelt flour is great for anyone intolerant to eating wheat and adding gluten-free oats makes this recipe even more gentle on your digestion. This recipe comes together without using milk, eggs or butter.     07:20 TIP add water or oil and an extra sprinkle of oats to the top (instead of an egg wash)
    07:43 Bake for 40 minutes and add a TIP add a small ramekin of water to the base
    08:00 Remove from the oven and after 5-10 minutes remove the bread from the tin and rest covered with a tea towel until cool before slicing

    Ingredients
    * Wholegrain Spelt Flour - 420g 15 oz (about 2 +3/4 cups UK)
    * Gluten-free oats, or your choice - 80g, 2.8 oz (about 3/4 cup UK)
    * Ground flax seeds (optional) - 1 tb
    * Maple Syrup, or honey or your choice - 2 tbsp
    * Olive oil - 1 tablespoon
    * Water - 350g, 12 oz
    * Yeast - 0.25 oz dry (2.5 ts) or 0.49 oz fresh
    * Salt - 1 tsp

    Method
    1. Whisk 11 oz water, yeast, maple syrup, oats and ground flax together and rest for 5 minutes. Then add in all other ingredients and combine for 1 minute until shaggy. Add in the balance of the water and knead by hand for 5-7 minutes or use a stand mixer with a dough hook for about 4 minutes. Spelt flour does not require as much kneading as regular flour.
    2. Remove and place in another oiled bowl covered for 45-60 minutes until doubled in size. The time varies depending on the season or how warm your home is.
    3. Shape the dough and place it in your loaf tin. I like to oil and line it with some paper. Cover and rest again for 35 minutes.
    4. Preheat oven to 430˚F, 390˚F fan 10 minutes before baking the bread. Before baking brush with water or olive oil and sprinkle some oats. Add a small container of water to the base of your oven. Bake in the preheated oven for 40 minutes. Remove the bread if the bread sounds hollow when tapped then it is cooked. Cool on a wired rack before slicing. I like to cover the bread to ensure a softer crust. I dislike hard crusts.
    5. Store for up to 1 week in the fridge or slice and store in the freezer for a few months.

    Hi Sue, I made this bread this week, I don't have a food mixer so made it all by hand 💪 it is delicious I altered nothing and I am delighted with the way it turned out so thank you for all you the work you put into the perfecting the bread I appreciate your efforts.😊 I think the carrot cake is next.       Great job! I am impressed. I should share more videos using my hands but I get RIS so I tend to save my hands and use the mixer. The carrot cake is also a good choice! Thanks for your really sweet encouragement. ❤️❤️

    Fabulous looks amazing I’ll try this one! I’ve already baked your white spelt loaf recipe and it turned out fantastic, I live on a dairy farm in Ireland but originally from the Gold Coast! Married an Irish farmer! I have an Aga and it’s just perfect for baking bread it makes super moist bread as it’s made from cast iron! I love baking it’s a favourite hobby of mine which my son and husband appreciate! 😊 thank you so much for sharing your recipes!!

      @trudycat72 thanks for your lovely message. It sounds peaceful living in Ireland on a dairy farm. Your story reminded me of my ancestry. My great grandmother came to Australia from Ireland to marry an Aussie farmer. I think that was quite normal back then. Happy spelt baking in your Aga!
