Yum Kai Dao
1-2 birds eye chillies
1 1/2 tbsp palm sugar
3 tbsp lime juice
2 tbsp fish sauce
4 eggs
1/2 yellow onion, diced
1 tomato, diced
3-4 stalks of chinese celery
2 heads of lettuce
3-4 bunches of coriander
toasted cashews or peanuts for topping
Kai Look Keuy
2 eggs
3-4 dried birds eye chillies
1.5 tbsp water
2 tbsp tamarind paste
2 tbsp palm sugar
1 tbsp fish sauce
deep fried shallots or garlic for topping
chopped coriander for topping
Kai Yat Sai
180-200g minced pork
1-2 cloves garlic, minced
1-2 stalks coriander (preferably the stem and root), chopped
1 tsp white pepper
1/2 yellow onion, diced
1/2 tomato, diced
1 tsp white sugar
1-2 tbsp oyster sauce
2 eggs
Hoi Tod
4 tbsp rice flour (not glutinous rice flour, just regular rice flour)
2 tbsp tapioca starch
1 tsp white pepper
1/3 cup cold water
6-8 mussels
2 eggs
1-2 stalks coriander, chopped
1-2 stalks spring onion, chopped
1 handful of beansprouts
Kai Jeow
1 tsp white pepper
1 tsp fish sauce
2 eggs
1-2 stalks spring onion, chopped
Yum Kai Tom
5 tbsp lime juice
1 tsp fish sauce
2.5 tsp white sugar
1-2 shallots, sliced
2 eggs
dried chilli powder for topping
chopped coriander for topping

I'm obsessed with the deep fried egg w/ tamarine sauce haha. Usually paid at restaurant like 5 - 10 bucks for like 2 eggs as I'm kinda afraid the eggs will explode during the fry at home :(
yes they're so underrated! don't worry, since they're soft boiled first, they won't explode when you deep fry them. also if you use a smaller and deeper pot (not a frying pan like I did haha) you'll minimize the oil spitting :)
