I'm always worried that eggs deep fried in oil will end up tasting like nothing but oil. I hope it came out well!

I’m Thai and it’s the go-to way of making an omelette. We even do it for sunny side up eggs. Personally, I think it’s the best way to make eggs but I could be biased lol. My recommendation to you, if you wanna try it, is to use less oil and season it with Thai soy sauce or fish sauce before frying. Sometimes I get a little experimental and add a bit of sugar, chilis, and lime. Try it out!!

@@livewellwitheds6885 omg yes!! Personally, I haven’t had a bad Thai soy sauce. My favorite is the Healthy Boy Brand Mushroom soy sauce. It’s literally good in or on everything. Kikkoman is NOT the way to go when it comes to making Thai omelettes.

Not in ASEAN, no, but the difference it make is huge, well maybe Lisa is bit overkill even for me, as long you can make the outer layer crisp like that, it's good, maybe about 3 or 4 tbsp for 2 egg, in round pan, like wok is the best rather than flat pan, (I use something called Wajan, here in Indonesia)

LoL Just goes to show you that the end result might look like nothing compared to its beginning. If you are one who likes crispy edges on your fried eggs this one is probably for you. The traditional French method of cooking omelette is to keep oil to a minimum and taking the omelette out before it starts Browning. Chinese method in contrast uses a wok to deep fry the omelette till it has a brown crispy skin. I am not really a fan of the Chinese style because omelette cooked in too much oil absorb it as they get crispy and can leave an unpleasant oily texture in the mouth. This crab omelette could be done better.
