How does the rest of the omelette get cooked?
The residual heat cooks the last little bit.
The egg continues to cook while the temperature cools down. 👍🏽 like a slow burn

why water?
The water in the egg will turn to steam as the eggs heat, helping it get a little fluffier. But isn't necessary.

Yes or you could add milk. It is only 1 tsp, stop freaking out about it. haha. A bit of water makes them lighter and fluffier.
