There's also several different variations to this style depending on where it's from. Different parts of china and neighboring asian countries all prepare them differently.

How long does cooking it out take with this recipe? 10-15 min because of the pans area?
This is a recipe that my mother cooked when I was little, she basically just added onions to what in Italy we call "Uova in purgatorio". It's really simple and strangely flavorful

As long as you're not counting carbs, then, yes. One of the most disappointing things to learn is that tomatoes have more carbs than you would think. Still, a very healthy dish nonetheless.

This is my dream job as I have no formal training but cooking for my friends and loved one for over 30 years. Try this from Balkans - Bulgarian mish-mash and Turkish menemen. The difference is that we also add bell peppers here. And white cheese in the Bulgarian version.

Queso fresco: white cheese its not mozzarella. Pica: it's salsa you'll find it at Walmart. If you don't have salsa but home made is better
