How to make New Orleans Crawfish Pasta (1st video)

    Recipe is as follows
    New Orleans Style Crawfish Pasta
    What you'll need
    12 oz package of Crawfish Tails
    Rotini Pasta 16 oz box
    32 ounces ( 2 pints) of heavy whipping cream
    Shredded Parmesan Cheese
    Salted Butter 1 tablespoon
    1 Green Onion Chopped
    Fresh Parsley Chopped until minced
    Tony Chachere's Creole Seasoning
    Step 1 Prepare all seasonings
    Chop Green onion into 3/16th's of and inch thick pieces
    Chop a small amount of fresh Parsley until it is minced
    Step 2 Boil Pasta
    In a medium size pot with simmering hot water add the entire 16oz box of rotini pasta. It should take between 7 or 8 minutes to cook. DO NOT OVERCOOK. Consistency should be soft but VERYYY slightly firm. PLEASE taste pasta while your cooking to insure that you do not over cook it. NOONE wants gummy pasta.
    Step 3 Once 8 minutes have passed, add pasta into strainer and rinse off with cold water. Once done add strainer back on top of pot and cover and let sit until it's ready to be used.
    Cooking Tip- When cooking pasta or rice, IF you are not so sure whether it's done or not it's always good to take a fork and taste the pasta or rice so see if it's done or at the consistency that you want!
    Step 4 Preheat fire to medium high heat. In a large pot add 1 heaping spoon (meaning over 1 tablespoon) of salted butter. Let sit until it melts and is at a slight simmer.
    Step 5 Add 3/4 Cup Green Onion and 1/4 Cups Parsley and let saute for 4 minutes
    Step 6 Add 12 ounces of Crawfish Tails and mix.
    Step 7 Add 2 tablespoons of Tony Chachere's Creole Seasoning and mix. Let simmer for about 4 minutes
    Step 8 Add 32 ounces of heavy whipping cream. Stir for 10 seconds.
    NOTE- take a spoon and taste to see if the flavor is just right. IF you feel there is not enough seasoning add 1/2 TEASPOON of Tony Chachere's Creole Seasoning. Remember the flavor will increase once the sauce thickens so do not add too much of seasoning.
    Step 10 Add Shredded Parmesan Cheese stir for 10 seconds and let cream mixture come to a boil. Let Cream mixture boil for 6 minutes OR until sauce thickens WARNING! Cream tends to rise at boiling point and will float over the pot so keep mixing the cream. If it rises too high then turn fire down ASAP. Do Not leave cream on the stove boiling. Monitor it at all times.
    Step 11 Add 4 cups of Rotini Pasta into sauce. Mix and let simmer for 3 minutes.
    Step 12 Serve HOT and enjoy
    Troubleshooting- (Oil build up in pasta) Before I say this I have already made the necessary adjustments to the recipe shown above that will prevent this from happening. If your Crawfish pasta has oil grease build up an hour or several hours later after cooking. Decrease butter to 1 teaspoon.
    Also if your pasta comes out gummy. To prevent this from happening you must follow the instructions given and taste the pasta while it is boiling.

    I use alfredo sauce as well as heavy whipping cream, it comes out beaucoup creamy! I'm so glad to see a fellow New Orleans native making this idk what to do with myself lol bc (no offense) but the people from out of town be doing what they want to our food. I admire the creativity, but don't try to recreate our food and call it your own baby, it's not gon' work! lol...loved ya presentation Charie keep reppin' us well 😏

      Oh okay cool that's not a bad idea using the alfredo sauce! :) Yes i know right! It's also good to hear from a New Orleans native like yourself! I'm always look forward to hearing from someone that's from the same area as i am! Yes i totally understand how you feel. They be adding fish, beef and corn into a gumbo like that doesn't belong. Then when you tell them something they wondering why we going off on them. They don't know about us New Orleans people. We don't play with our food especially our gumbo. Get it right or don't make it at all. Yes i sure will keep representing our city! Thanks so kuch for commenting!

It will give you the video mark in which that part starts on! :) They say us Louisiana people know everything like of course we have some of the best food everrr lol Yes i just posted a video of chicken and dumplings about 2 days ago.     THIS IS SOOOOO GOOOD! I did this today! I didn't have whipping cream, I had half and half. And I didn't have green onion and parsley, so I watered down white onion and parsley flakes and I got the wrong cheese lol (Italian style cheese) but still it's amazing! Thank you soooo much!

    Great recipe! I just ordered 3 lbs of cajun craw fish tails from this awesome site I found online where I live. I'll be making fried craw fish with a cajun beer batter, craw fish Po' Boys & I will definitely be trying this dish out with my batch. I been looking for a good new craw fish pasta recipe to try. Only I was thinking of using fettucine pasta instead, cause that's what I have on deck. Will let you know how it comes out. Cheer!!!

    How much shredded cheese did you use? I saw it listed in the ingredients, but I didn't see you put it in the pot.

      In the recipe I did not include the amount of Parmasean cheese. Add between 1/8 or 1/4 cups.

Next time just add a small amount of noodles at a time until you reached the desired amount. :) Are you from New Orleans!

      Lol i had way to many noodles and the bottom was burnt , so i put it in a glass pan and just took the burnt parts out , Popped it in the oven ( I had no choice )should be done any minute now

      R6Rell OMG what did you do? You must've had your fire on too high or something. Yikes. lol Hope it doesn't taste burnt. Okay that should work but next time you have to keep a close eye out on it. Stir it every 1 to 2 minutes if you have too. Also turn your fire down when you add the pasta. Oh okay cool.       You don't have to use the green onion but I will warn u, it will affect the flavor slightly. Yes u can use Louisiana seasoning.

    I made this recently and it was very very good! But while I was eating and it was cooling, I noticed a lot of grease was starting to form in my bowl. By three quarters of the way through, I went and scooped it out because there was so much. How can I keep that from happening without sacrificing flavor? I'm making it again tonight and hoping to keep that grease out of it this time. Help!

If there's too much oil left over, reduce the butter to 1 tablespoon or if you want even less add 1 teaspoon. Thank you very much for your comment.     Just to let people know in case they haven't noticed, and in case they prefer local seafood. Despite the name, Bernard's crawfish are not from Louisiana but from China!! Check the back of the package. Like your videos!

      You're right about that! Bernards crawfish tails are from china. I noticed this long time ago. They do sell the local louisiana crawfish tails. They are different in size, texture, and flavor. They are also expensive and hard to find. There are two local brands who sell them.

      I like all pastas! That's a difficult one to decide on! I would pick the Crawfish one since it is one of the first pastas I learned how to cook! As for seasonings just use the seasoning that is common in your area for seafood!
