CRAWFISH FETTUCCINE 2 lbs of Crawfish 1 Cap of Liquid Seafood Boil (^^If leftover from a boil, do not use) 1 Teaspoon Garlic Salt 1 Tablespoons Cajun Seasoning 1 Onion 2 Sticks of Celery 1 Bell Pepper 2 Sticks of Salted Butter 2 Teaspoon Minced Garlic 1 Can Mild Rotel 1 Can 10.5 oz Cream of chicken 1 Can 14.5 oz Chicken broth 1 Pint of Half & Half 1 (16oz) Block Jalapeño Velveeta 2 Aluminum Pans or One 9x13 dish 2 (16oz) Packs of Fettuccini Noodles Heat up a large pot on a low heat. At this time, begin boiling water for pasta. Season the 2 lbs of Crawfish with liquid seafood boil, garlic salt, Cajun Seasoning, and move to your fridge. *(If using boiled crawfish, then disregard. You may however still need to season the sauce.)* Chop the Onion, Celery, and Bell Pepper. Melt 2 sticks of salted butter in a large pot. As the butter has melts, raise your heat to a medium heat. Add the onion, celery, and bell pepper. After the vegetables have cooked for about 10 minutes, add the minced garlic. After another 15 minutes, add the Rotel. Let cook for another 5 minutes. Next add the Cream of Chicken, Chicken Broth, and Half & Half. Cut the block of Velveeta into cubes, then add to the pot stirring often. By now your water should be boiling. If so, add a dash of salt and then the fettuccine. Boil for about a minute less than the package directions, then drain into a plastic strainer. (At this time, preheat the oven to 350°) When all the cheese has melted, add the crawfish to the sauce and stir the dish well. At this point turn the heat to low. Next gently blend the fettuccine noodles into the sauce. Don’t worry if the noodles are stuck together. They will gradually come undone as the sauce blends in. Once the fettuccine has mixed in with the sauce, turn the heat off and split the contents of the pot into the two pans. (Unless you have a deep 10x13 baking pan) Cover each pan with foil, and bake in the oven for 25 minutes. Gently remove the foil, set aside, let cool for 5 minutes and then serve. Cook sum garlic bread! 😊
@ The Cajun Ninja. I live in SETX, I can be in LA within 30-40 minutes. I can not locate Jalapeno Velveeta like anywhere. I've searched as far as Houston and as far East as Lake Charles. I'm beginning to believe that this Jalapeno Velveeta is a myth LOL! Do you think the Queso Blend version with a can or 2 of green chilies be about the same or in the ballpark?
The Velveeta with Jalapeno is impossible to find in Southeast Texas (Beaumont area) BUT Kroger sells a Queso with Jalapeno that's always in stock. I like to freeze left over crawfish in the water I cooked them in. They are great in these recipes. If you want a plate, you got about 5 hours to get to Texas.
How do you store and reheat the leftovers? I used one bag of pasta and it made way more than we can eat in one night! Delicious though (used leftover crawfish vacuum packed and frozen from the Easter boil). I know I’m going to be wanting some for lunch tomorrow!

Creole Italian dishes are the mixing of southern Louisiana food influences from southern Louisiana’s local population and Italian food influences brought by Italian immigrants to southern Louisiana. Notice in all of these recipes add shredded cheese as the very last step and notice that it is a very small amount of cheese meaning it is a garnish and not a base cheese sauce. I feel you I love and miss Cajun classics and I am loving the recipes he is showing us. Sadly certain seasonings and crawfish are hard to find in my city.
Any and all pasta water has to be seasoned to the saline equivalent of sea water. Pasta is like potatoes, they are very resistant to absorbing salt so you have to be sure that the salt content of the water it's being boiled in is that equal to sea water. Or else you'll be enjoying all of that wonderful sauce and crawfish while biting into a bland ganki noodle 😆

I also cold down crawfish heads when ever we have them n freeze the juice. Then cook my pasta in it when needed. O my goodness so good.

You can also call it crawfish pasta or crawfish fettuccine (if fettuccine is used) even. As for Louisiana dishes with pasta in them, the likelyhood is higher that Louisianians with Italian ancestry were involved in their creation or influenced it. Anyway, it’s a creole Louisiana dish and it’s delicious.

My knowledge of south Louisiana food and its history is expansive. So with that said, let me say this…there are more Crawfish Monica recipes in Louisiana with Parmesan cheese in them than you and I have fingers and toes. Parmesan cheese is absolutely an acceptable ingredient for Crawfish Monica in Louisiana. There are of course versions of it without cheese, but there are many versions of it with cheese. Plenty enough in number to back a comment I made that you replied to. In fact, I’ll post some ingredient lists for various Crawfish Monica recipes, most of which are from Louisianians:

Notice in all of these recipes add shredded cheese as the very last step and notice that it is a very small amount of cheese meaning it is a garnish and not a base cheese sauce. Any and all pasta water has to be seasoned to the saline equivalent of sea water. Pasta is like potatoes, they are very resistant to absorbing salt so you have to be sure that the salt content of the water it's being boiled in is that equal to sea water. Or else you'll be enjoying all of that wonderful sauce and crawfish while biting into a bland ganki noodle 😆
