Fancy Macaroni and Cheese is a twist on the old classic baked pasta dish. Succulent pasta is combined with cream, milk and cheese to create a deliciously thick cheesy sauce. Fried bacon and semi-sundried tomatoes are added along with freshly grated Parmesan cheese and bread crumbs to create a dish your whole family will love!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:
500g Pack of Pasta (I used Small Spirals)
500ml of Pouring Cream
1/2 Cup of Milk
2 Cups of Grated Tasty Cheese [aka Cheddar Cheese] (plus a little extra for topping)
2 Rashers of Bacon (Fried and Diced)
100g of Semi Sundried Tomatoes (available from the Deli)
1/2 Cup of Dry Bread Crumbs
Freshly Grated Parmesan Cheese
Salt and Pepper
Preparation Time: 10 minutes
Cooking Time: 30 - 45 minutes
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

You don't have to bake it, but baking does add a lovely crunchy topping ;)
Honestly, I think you do have to bake it. The baking process is what marries the noodles with the sauce. Stove top mac and cheese always just seems like noodles swimming in a cheese sauce. And you're right about the breadcrumb topping - you need that! Thank you for the recipe. :-)
@JeansTake It was diced bacon, I cheated a bit and used some pre-diced bacon from the deli :P Ham also works well in this recipe.

@hubbynwifey I would not recommend replacing the cream with milk, as the cream helps to thicken the cheese sauce ;)

@cucurox I used a thin "pouring" cream suitable for using in coffee. The coffee cream you described sounds perfect ;)

if you mix two table spoons of corn flour to your grated cheese before you add it to the pot, the sauce will cling to the pasta better :)
Can I use regular all purpose flour?

@MooseLandVids I used regular pouring cream for this recipe. The same kind you would use for adding to coffee/tea or for whipping ;)
The next door neighbour's dog can smell the food in your kitchen, hence why he/she is barking. Who can blame him/her? Your kitchen would smell divine. :)

@@baileygregg6567 when read receipe the whole thing sounded usual to me.. pouring cream, tasty cheese, rashers(wth is a rasher), tasty bits..im smart enough to know/assume what they are. What is odd the amount of different names each country has for the samething ... to me tasty cheese might be cheese in a can, Cheese Whiz

@Beno32145 Nope, the tomatoes are entirely optional. Feel free to leave them out. This won't effect the cooking time or temperature ;)

My favorite mac and cheese recipe includes: Kraft Dinner, Bulgarian smokies cut into thin slices and a can of beans in tomato sauce. Yummm

I can't remember if I've commented here already, but we made this dish AGAIN last night and it was fantastic! My only variation was to substitute the bacon (because we didn't have any) with more sundried tomatoes. It was great! Very cheesy, creamy, and delicious. Another recipe for our cookbook!

@xcert It doesn't have to be baked. If you have a griller, you can melt the cheese topping with that. The macaroni and cheese can be served straight away after the saucepan section. The baking just adds a nice crust but is not essential.

I also make a great macaroni and cheese and here is the ingredients extremely easy.
1. Pre cook a box of rigatoni noodles 1lb.
2. One cup of sour cream
3. One cup of cottage cheese
4. Two 16 Oz packages of finally shredded sharp cheddar cheese.
5. Half a cup of milk.
6. Two tablespoons of salt
Mix all the ingredients together and noodles.
Poor all the ingredients into a rectangle square cake pan and cover with foil. Cook for approximately 35 40 minutes. Just enough to melt the cheese and stir at least one time. Then take off the foil and let it cook for another 10 to 15 minutes. It is the best macaroni and cheese. I used to go to Savers and buy macaroni and cheese in the frozen food section and the macaroni and cheese they had their was called,

So I did my research to figure out how to make it and I figured it out.
You may have to add a little more salt when it is being served but it is a great macaroni and cheese!
David you are just so natural and without fuzz, just like we like it, there is no pretence or fancy pans or utensils, you just get the job done and that is it, love your style. Thanks for being you. I hope your recovery is going well :)

@SuperKnowledgeSponge Making a roux is simple. Melt 50g of butter over a medium heat, in a saucepan. Add two tablespoons of flour and mix until a yellow paste is formed. Turn off the heat, then add 2 cups of milk, a little bit at a time, until you have a white sauce. Turn the heat back to medium and stir until the sauce thickens.
From there you can add cheese to taste and then use is on top of the cooked pasta. Hope this helps!

@JessicaPersonalChef There are other ways of making cheese sauce (usually with butter, flour and cheese etc) but this way is quicker and easier :)

@vidoodeum You can use a large baking tin if you prefer. No need to adjust the temperature or cooking time ;)

@cozzyk Tasty Cheese is regular cheddar style cheese (the same kind you would use for sandwiches etc) - Mozzarella Cheese would also be good ;)

@GoMetricToday Sorry! A rasher is an Australian term meaning 1 slice of "Middle Bacon" - so chop up and fry 2 pieces of bacon ;)

Yes, that would be fine. You may need to reduce the cooking time slightly if making smaller portions. Just keep an eye on it while it bakes ;)

I gave this a go the other day and mine turned out unexpectedly orange. I admit I didn't measure the amount of cheese (avid fan of cheese so thought I'd be able to put a whole lot in!) and once cooked, there was a lot of that orange oil from melted cheese on the bottom of the tray, undoubtedly due to the amount of cheese I put in. I thank you for the recipe and will endeavour to stick to the instructions in the future!
@reboobyq Regular Tasty Cheese is what we Australians call any normal Cheddar cheese (the stuff you would use for a sandwich etc) :)

I always like to mix some ham into my mac and cheese and season it with some salt, pepper and nutmeg, Delicious! ^^
Tagliatelle also works really well for this dish to 'fancy it up' a bit ^^

When I worked for CDPHP, they had an award winning chef running their cafeteria. He made the most tender calamari, pork belly that melted in your mouth, and other delicacies. But when we knew “Adult Mac ‘n’ Cheese” was on the menu, the line was out the door! People used their entire lunch periods waiting in line. The secret? (Other than the to-die-for base…) He had a choice of dozens of add-ins. So, with David’s Mac ‘n’ Cheese, go crazy with the add-ins! How about baby garlic shrimp? Or bbq chicken? Bits of steak au poivre?
