I can't figure out why anyone would dislike Kent and Shannon's cooking, hands down one of the best channels on TH-cam, period! But sadly, there are always a handful who would complain about anything.
I'm Italian - my mother used to make stuffed bell peppers when the peppers were plentiful and cheap in California. Meat, rice, cheese, and Italian spices. So good to see the cowboy version. My mom used to freeze the complete stuffed pepper in aluminum bread baking tins and then re-heat them in the winter. Now that we have a year round supply of peppers from MX, there is no need to freeze them. Anyway - thanks for sharing and thanks for fun stuff to watch on You Tube - you are a character! Mike

Love your videos. I'm a retired teacher but I work at a group homre for disabled adults as a cook, simply because I what to, I love to cook. In the summer time I especially like to cook on a open fire or mesquite charcool. I've use a bunch of your rescipes and they are ALWAYS well liked.

I love it when Kent refers to the peppers as "participants". And gets the Beagler alarm out...lol But seriously. I love stuffed peppers and you have just opened up a big door for me in cooking them a better way. Thanks Kent and Shannon.
I use a propane torch and scorch the outside solid black, not brown; good and black. It will not harm the inside even if you leave the torch on one area for 5 or 6 seconds. Burn the stem ends and any creases real good to release the skin. After blackening, run them under water and use a brush to remove the black. This makes your peppers a hell of a lot more tender. Don't use green peppers unless you like bitter. I just made some yesterday and used red, yellow and orange. I never use green in anything.

Hello Kent and Shannon and, of course, the "Beag"! Stuffed peppers are one of my go to comfort foods. I like the way you made these peppers with Hatch chilies and cheese mixed in with the meat instead of using rice. I am always looking for fairly low carb recipes and this looks like a winner! I buy the bell peppers when they are on sale and have recently been cleaning and freezing them. I have them cleaned and whole, as well as chopped and sliced. So handy. I love stuffed bell peppers, but we like ours with rice in with the meat and cheese and peppers and serve them on a bed of rice. But we don't think the rice freezes well. So we just freeze the peppers ready to use and the rest is easily prepared and put together. I use tomato sauce for mine too. I bet the chicken broth is wonderful with the peppers. When you make your meat mix, try adding some rice, especially your fried rice, which gives some relief to the texture and adds flavor. Its good!!

Hello Kent and Shannon and, of course, the "Beag"! Stuffed peppers are one of my go to comfort foods. I like the way you made these peppers with Hatch chilies and cheese mixed in with the meat instead of using rice. I am always looking for fairly low carb recipes and this looks like a winner! Yeah, that was no "stuffed pupper" and must have downvoted it theirself.
I buy the bell peppers when they are on sale and have recently been cleaning and freezing them. I have them cleaned and whole, as well as chopped and sliced. So handy. I love stuffed bell peppers, but we like ours with rice in with the meat and cheese and peppers and serve them on a bed of rice. But we don't think the rice freezes well. So we just freeze the peppers ready to use and the rest is easily prepared and put together. I use tomato sauce for mine too. I bet the chicken broth is wonderful with the peppers.
