    Sir,I am originally from Matamoros, Mexico and got my citizenship through the U.S. Army. Your video reminded of some of my earliest memories cooking Mexican food with my grandmother when we used to be poor in Mexico. You nailed this recipe and you made me feel some great nostalgia for those simpler times spending time eating together around the table with the entire family and friends both in Mexico and in the Great State of Texas. Keep up the great production Sir, your productions bring nostalgia and happiness to many of us veterans from the southern states who lean on family to do what we do for this great country.       @@Metrilla well living in Los Angeles for a long it's kind of assumed that white people can't make good Mexican food.
      I once brought a friend of mine from South America to have my grandmother's Mexican food and I wasn't really sure if he was going to like it but surprisingly she thought it was fantastic.
      Because I grew up in a neighborhood with mostly Hispanic and black just the color of my skin would piss people off and they assumed but I didn't know anything about their cultures at all

      @@meggrotte4760 well idk but here in Texas the Mexican culture is pretty ingrained into the Texan culture. (Edit: their are a ton of Texans here who use Spanish words as everyday words as a matter of fact. Idk about cali but I assume it's the same) Tex-mex is pretty good. But a good home cooked meal is way better IMO

    I am Mexican, lived in Mexico my whole life, love food and I also cook a lot, came to this video in a bad attitude thinking this American would fail... and this guy rocked it! This guy is the first US dude i see that cooks authentic Mexican rice, also I've seen other videos and this guy definitely knows what he's doing. I am a fan now, thanks for cooking real Mexican man!

    Hi Kent, I wanted to share this story with you and Shannon. A Mexican/Canadian friend of mine here in Canada had her food business pretty well shut down by covid. So she went on facebook offering pre orders of tamales for Christmas. I remember Christmas tamales from growing up in California and you don't find 'em here unless you know somebody. So I signed up for an order and invited a young neighbor couple over to join us for a simple traditional holiday meal. I used this recipe to make the rice. Couldn't grow or buy any dried ancho chile this year but I did have some dried whole chipotle. I cut back on the serrano and added a whole chipotle. This recipe is a winner and did my friend Claudia's hard work proud. Thanks for sharing, we used your teaching to bring our little community together and share the bounty we're given.

    I've been following this rice recipe since you first posted it. I have to say this is the best rice I have ever eaten. It is so easy to make and comes out perfectly every time. I made a big batch of the pepper/tomato mixture and froze it in icecube trays. I just grab a few and add them to the water when I ready to make the rice. Again, soooooo good!

    I've made this six times in the last two weeks. Easily the most delicious rice I've ever tasted. Awesome recipe! I'm not using heavy cookware like cast iron so I give it a 30 min simmer with a 10 min rest.

    Two things:
    1) I really like the beagle.
    2) My mom's secret ingredient is the "Knorr cubes" so add this to the "your rice is legit" pile.

      I add cilantro, diced tomato, and diced onion; then tomato paste. In Az we dont add cumin.

      Instead of ancho I use hot smoked paprika, and finish it with a bit of olive oil.

      Violet_blume you need to grow your own jalapenos, etc.-- you can do it in a 5-gallon bucket if you're cramped for space. Also, they are perennial plants if you move them indoors in the winter.     Mr Kent, Milton here. One of the best things about tuning in to your video is the location yaw chose. Unspoiled landscapes. When you got to the place yaw are standing, you can’t recognize if a person had ever been there. When yaw leave, no one will be able to see yaw were there. History.     Just made it, and your promise is true. This is the best Mexican rice I have had. I love Mexican rice and usually judge restaurants by their rice.
    I do however agree with Shan on the one pepper. I used one pepper like she recommended, and my mouth is still tingling a bit, but not horrible. Just enough heat. Thanks so much.

    What a wholesome channel, i really enjoyed this video, even more since im Mexican and i love traditional food.
    Usually, the tomatos and onions are boiled, and blended in the same water with salt and garluc and roasted serranos, but i like your twist to the salsa, is how mexicans eat it on the north side of the country.
    This rice, we call it "Red Rice" goes with peas and carrots, i dont know hot they are done, but they give it some texture.
    The Red Rice is basically our main dish in everyday life, alongside with boiled chicken legs

      @@IanMalcolm-rw5pn I think you are mistaking the word gringo for a deragotory term. It is used to refer to a foreigner that is not Hispanic or Latino, usually Americans. It may be used by some as a deragatory word when preceded by a word like hijoputa which means fucker. But even then it migth not be meant to offend. Mexicans like to curse a lot in jest, without the intention to offend. To differentiate between an insult and banter from a Latin American you have to examine the situation, wording, and tone of voice.
      For example, when a southerner(of the U.S.A) says bless your heart he/she migth be expressing sympathy or implying you are an idiot.
      He was being playful and giving a compliment because he wrote compadre(friend) and that he subscribed.
      Sorry for the lecture!😁
      BTW, I am a Hispanic raised in California and are often perplexed by Mexican humor and language.😵🤣

    I've been looking at Mexican rice recipes for over an hour - they are all the same - and "authentic like grandma made" - authentic quicky recipes for those who don't know any better. At long last someone who is NOT cutting corners - and uses chiles! I can smell the complex flavors from the roasting of the ingredients on my computer! Thank you sir for once again showing the proper way to do things.

    I was pretty damn skeptical at first. Braced myself for bastardization. Instead what we have here is not an ignorance of tradition, but an understanding.       @@TheTranceCartel I haven't watched any of his videos but one, which brought me here, on caring for cast iron. I too was bracing myself, but that's natural. I'm learning to make Chinese food now. Do you think mine is going to come out like some old lady cooking it from that country? Of course not. Especially when someone (like me in this case) comes ignorant of a tradition, all I know about chinese food is panda express, which is to real chinese food what taco bell is to mexcian food. So I think OP was right to assume that's what this might be, based on his race. It's what I would assume of myself based on my own race if I was cooking anything traditional of a culture not my own.
      Having said that, OP's right this guy knows what it is! I like this guy and will be subscribing.

    I've seen cowboys only on western movies and many europeans think that "these days" are gone since the late 1890 thus watching this on youtube makes an interesting contrast how far thechnology went since cowboy times ^^ almost like some kind of time machine

    CKR, I can't thank you enough for doing all these videos of recipes and actually walking us through each step. You cut out just enough of the fluff to keep it real and on point. I could go on and on about the pluses and how much I enjoy these but, most importantly sir, I am learning a lot and building my confidence and I just turned 60 on Thanksgiving last. The one thing that I have to complain about though are these recipes are so good I keep gaining weight LOL.... Seriously though I hope and pray that this finds you and yours in good health and happiness and please keep these coming. I not only love watching them, but I love to cook and most importantly of all about these videos is, I love to eat. May God in heavy bless you for doing all this work just to bring us joy and excitement in our cooking...

    My son visited my house for the last time before he starts his new life in a new city. He wanted mexican food (great choice), and I used this recipe to make mexican rice. It was the best choice, I have never had better. Thank you Mr. Rollins!

    When I saw this video, I knew I had to make Cowboy Kent's Rollins Mexican rice. I was happily surprised when I found all the ingredients at the local grocery store this morning; especially the Serrano Peppers and Ancho chilies. Making it is as easy as it seems and in the end, we both enjoyed this spicy and fluffy rice with our tacos. We also had a very fun time working on this together. I would recommend this to anyone looking for an alternative to flavored rice that comes packaged in a box. Hats off to you Cowboy Kent Rollins.

    Almost exactly how my family does it, we use butter to brown the rice and use that same brand of chicken powder but we use the tomato flavor one.

    This is essentially how I make my Mexican rice, but I like to toast some spices while I'm toasting my rice. Nothing to crazy, just some cumin, chili powder, and a little turmeric(for that yellow color). And I personally like peas and carrots in mine, but to each his own.

    Great Mexican rice. I do it your way, but briefly toast the anchor and garlic(too long will make them bitter). If you've never tried Chipotle in Adobe sauce in place of Serrano or both, give it a go, especially if not cooking on a open fire/grill. Adds that smoky flavor we all love.
