I can hear the real emotion in your voice when you describe the poor man who lost his grandson. They say you can't really know someone well from behind the camera, but I can't help but feel like you're a great person. From a longtime fan, thanks for all the entertainment, delicious recipes, and for providing a very interesting window into the "real" cowboy culture.

For anyone watching this from my side of the pond in the UK, the Chorizo Kent is using is Mexican Chorizo, not the cured Spanish type. We can't buy it here, but it's easy to make, there are lots of recipes on the Internet.

Just a quick note from someone who grew up with manicotti. To fill the dried pasta use a pastry bag OR put the filling inside a zip lock style bag, then snip a corner off the bottom with scissors and squeeze the filling in, also if you have one, a sausage stuffer does it very quick.
Thank you for all the great recipes!

@Stop The-insanity I bought mine off craigslist for $25, but I've used old barrels before to smoke a ham. They're not complicated, just remember slow & low... above 180°F but below 250°F and smoke for a while then cover in foil and place back in smoker until done. It's about 2-3 hrs for ribs, 4-6 for larger thick cuts & then about 8-10 hours for a whole hog (depending on size)

Have you ever thought of filling a icing bag with this mixture, cutting of the end and filling the shell that way? I am going to try it. My God fill your week with love and blessings.

Kent, first I love the cooking show that you and Shannon do!! Comment on ice box. I'm 76 so I've been around a while. When I was very young, some of my family had a wood cabinet, insulated and the ice man would come and deliver big squares of ice. It was placed in the "ice box" and kept things cool enough to prevent spoiling. The ice man might have come every day? I grew up with us having an electric refrigerator. Just sharing.
Thanks for this recipe. It looks so good! I'm going to try it. Papa Bob in MO.

Hey Bob, I'm 10 years younger but remember riding to town with momma and getting ice blocks from the icehouse. The blocks would slide down a shute and the iceman would use big tongs to load into the car. c1960s, Duncan, Oklahoma.

I asked, my grandkids what they wanted for dinner today. They said shotgun shells! So I made them! So good. But I boil my shells for 7 minutes, let them cool, then I break out my beef jerky gun , put the round skinny attachment on it and pump up 🆙 those shells like a balloon 🎈 I tell you what you get way more meat inside the shells.! Thank you for your time and videos! 🙏

  • @jimscott4539

@Cowboy Kent, little secret when it comes to filling the shells….If you have a jerky gun. Load it up with your filling and put on the sausage attachment. Set the bottom of the shell on a flat surface(cutting board). While holding the shell to the board to close the bottom off. Insert the nozzle and fill from bottom to the top. Press in the ends a little and done. Will be tightly filled with no air pockets. And, best of all it’s super fast compared to hand filling. Good luck and God bless America
