I like to make this lower carb with cauli rice instead of the real thing as a filler for them. Add in an egg too! I also put cheese in mine. These are great as you can customize to your taste. Nice work. When I have the empty pepper cases, before blanching, I fill with water then pour into a measuring jar to determine my quantity of filling. I then make filling X 2 and freeze extra for next time. Used to use ground beef but moved on to shredded beef from either the slow cooker or the Instant pot.Also , just like with fried rice dishes, I like to make my cooked rice a day ahead so it is not too moist. Very adaptable recipe. Love it. thanks Mike, another winner.
Good recipe and I cooked the meat and spices separately then mixed it all. I mixed the cheese into mixture so it would not burn on top. The tip to cut up the tops and mix with onions added so much flavor. Thanks
very nice! I am cuban and would sooo make this a picadillo stuffed pepper which picadillo in itself requires peppers, so this would be great as a picadillo version for cuban cuisine.

Interesting. Just like meatloaf, everyone has a different recipe. This looks interesting. I might substitute raw sausage meat. You could also stuff hollowed tomatoes, and eggplant.
Hi. I make stuffed peppers all the time! I cut them in half....I use ketchup and lil Worcestershire sauce and hot sauce..some times I add Italian sausage. I'm making for dinner 2mmorw..going to try those fire roasted tomatoes Now! And fresh turkey burger meat instead of hamburger meat and lil cumin this time..heard cumin is good in spaghetti..so Y not try it in this! Oh..and brown wild rice as well taste good..Ima do casserole of this instead of stuffing the peppers. Good eating everyone!😊
Bell peppers come in different colors due to their stage of ripeness when harvested. While they all belong to the same species, Capsicum Annuum, their colors vary depending on how long they ripened on the vine. ;-)

I had extra mixture filling
so I added it to 3 banana peppers
I never thought of using the tops as extra filling, what a great idea!
