    Eggplant is one of my favourite vegetables but I had never imagined that it can be used in a burger! This is so innovative! Amazing upload as always 👏👏👏👏

      I've been eating eggplant sandwiches for years, inspired more by Italy than Spain so I tend to have them on ciabatta rolls (after just slicing thickly, sauteeing in olive oil and squirting with some fresh lemon juice). This is fine -- the flour/egg/crumbs addition -- if so disposed, but it can be just as tasty with a lot less fuss. But that's the cool thing about cooking. Add or subtract what you like, what you have, in dishes like this. I use Kaiser rolls if I don't have any ciabatta in, and I garnish if and as I please (not yogurt, to which I am allergic).

    I'm not a vegetarian or veganer, I just eat what I like. This looks amazing, especially as I love aubergines ... Definitely going to give it a go!

      I'm not vegetarian either, but I have stopped eating red meat, and ground beef is just gross! Most of it contains "pink slime", which the industry used to label as “lean finely textured beef,” which is meat paste heavily processed and treated with ammonia to kill bacteria and make it look fresh and mixed with regular ground beef. It's safe to eat, but sometimes you can actually smell and taste the ammonia. Yuck!
      I'm making this tonight, with the yogurt sauce (that sounds so good!). I think I'm going to cheat a bit and add some crispy bacon to it because I think that flavor will go well with the sauce and tomato. I bought pretzel hamburger buns yesterday, so I think this is going to be a winner!

      @@LazyIRanch - I'm also not a vegetarian, but I won't eat any factory-farmed meat any more. Now that I only eat meat from small local farms where I know the animals are raised with respect and tenderness, in natural pastures and roaming freely, I use it very sparingly -- because it is, appropriately! quite expensive. These eggplant burgers look so hearty and delicious, I want some, too -- and your pretzel bun idea is fantastic!

    This recipe was simple and delicious, perfect for the extremely small kitchen in my apartment. My local grocery store was out of eggplant, so I substituted with portobello mushrooms and it was still amazing. Thanks for another great video!

    Another hit ! And for the non ovo-vegetarians, a simple water and flour batter will do as a substitute for the egg wash. I'd add a pinch of salt to it, of course, but also perhaps a tiny bit of ground cumin, and some freshly ground black pepper as well.

    I usually try to grow tomato and egg plant in my garden during the summer. I am going to save this for when I have my own vegetables it looks like it could be a winner with my family

    I think this is a recipe where I would definitely prefer a good olive oil. I would also consider using the paprika in the flour mixture in addition to breading.

    I love eggplant! But I've had such bad luck always getting ones that are full of seeds (which makes them bitter, no matter how much you salt them). This makes me want to try again even though I swore off working with eggplant. Thanks so much for the inspiration! Gotta find anyway I can to keep veggies front and center.

      older eggplants do seem to have a lot of seeds and bitterness! I suggest trying to select smaller eggplants and making sure the skin is terse/tight/glossy, not at all wrinkled or with any soft spots. Also, white and purple striped eggplants seem less bitter; if you have access you could try that. As a last resort, peel eggplant, slice into rounds and leave uncovered in the refridgerator a day to reduce bitterness; but I have not done this with eggplants with many seeds.

    Looks delicious too! I’ll make this veganized. Hopefully a flax like “egg” will work. Also maybe I’ll try to air fry instead as I don’t like frying things, even though I know it works well with eggplant (silly low-fat diet :( of mine). I can see doing this with portobello mushrooms too 🤩!
    -P.S. this was indeed delicious! Baked worked just fine with a little bit of sprayed avocado oil. Also with the veganized Spanish paprika garlic aioli yogurt sauce, on a small pita bread and some greens 😋! So light too!

      Adam, to make this vegan, would you use aquafaba in place of the egg wash? Also, of course, vegan yogurt (Almond Breeze plain yogurt would be my choice).

I’ve been vegan for eight years, and I’m not even close to 100%, because I have a picky teenager, and I hate throwing out food I paid for. When I’m living on my own, I’m going back to straight WFPB vegan.

      @@HeronCoyote1234 I am 54yo and meat was a hudge part of my diet since I can remember. This February I decided to switch to vegetarian diet and than I took another step and became vegan. Last week I made complex medical exams. My numbers are incredibly good. Cholesterol dropped as a rock, blood pressure is perfect. Lots of my previous medical problems dissapeared without taking any medicines. I lost 14 kilos (about 30 lbs) so I can wear M size clothes instead of XL. I feel better than ever. Helping the planet is also an important factor. Life is great :D

    Iknew a cook who made what he called Mock Meat out of eggplant And it did taste like meat beef

    Wow, what a terrific idea to use an eggplant for the meaty part of a veggie burger! What if it was sandwiched between two portabello mushrooms instead of brioche buns? Insane, right? And of course a glass of Spanish wine!

      You know what? You could totally make that work, by broiling the portobello mushroom caps ahead of time. Spray them with a little Trader Joe's spray-on olive oil, dust with some salt and pepper, and broil the mushrooms until they are just a second or two away from burning (slightly charred). Take them out to cool and then layer them with your eggplant burger (I think you'd want to add a little hot sauce, too). OK, now I'm getting hungry!
