    This same recipe only using pesto instead of the parsley mixture is also really good.

    This recipe really does appear to let the eggplant shine as the star of the show! Not breaded, fried and smothered in sauces or cheeses! I have always wanted a “perfect” recipe for them, this looks like the one! I am going to go to the store to get a few of the missing ingredients so I can serve this tonight with a salad!       I love eggplant also,I want to share one of my favorite recipe. Salt,drain, drench in flour,fry in oil,put on paper towel, smear with little mayo,put on top slice tomato and top it with shredded mozzarella with mayonnaise and crushed garlic,parsley on top.On second day/it you have some/I put it microwave for few sec to melt cheese.
      Delicious!

    Don't throw away that toasted cheese! If it's not bitter (burnt), it's excellent as a garnish.

    I followed this as shown except that I like to use a veggie Peeler to make stripes in eggplants & zucchini. ( only me likes this) I only had provolone cheese on hand. To say it was scrumptious is an understatement. It was so good that we almost fought over it. I will make it many times over but will have to double the recipe. Sad to have no leftovers tonight but glad everyone loved it. Thanks do much for sharing this jewel of a recipe. We are not worthy!

    I just made it. Very good. More garlic than I am used to, but I got used to it quickly. First time I successfully roasted eggplant. Usually, it is bitter.

    Eggplant is one of my favorite foods, but a lot of even the greatest recipes for it - like eggplant parmigiana and Imam Bayildi - are very high in calories. Albert's eggplant recipes are much lighter than most, and his trick of salting and draining the eggplant before cooking is a great way to keep it from absorbing too much oil and getting mushy. LOVE!!!

      Sigh,,, deep breathe, sigh... I'm pretty sure you don't understand the meaning of the word farm. But i wouldn't expect anything less from a commie. So while, hopefully you're taking this chance to educate yourself. and learn the meaning of farming. and hopefully how to engage brain before mouth or keyboard. i'll be eating some delicious chicken tendies.. from chickens, that were farmed, on a farm, using farming practises. If you still don't get it. maybe we could go for a chopper ride. we can fly above some farms, until we reach a lovely concrete car park.. Coz remember ..... the only good commie, is a pancaked commie....

    Made this tonight. Good recipe. I used 12 year old Cheddar instead, and I used extra garlic. Im a garlic fan, but stick to spainonforks ratio, mine was too garlicky. Great recipe nevertheless. Thanks

    I'm interested to know why u need to pre salt the aubergine and leave it in the colander for half an hour first?looks v tasty btw!

      It takes out some of the water so it roasts better and also removes some of the bitterness

    Do you have recipe for Spanish rice? I remember my grandmother making it with chicken drummettes,olives,she put in cream of mushroom sauce and mushroom,with celery,onion,tomatoes than rice.

    Once again - a beautiful recipe - so simple, cheap and nutritious. I have some lovely tomatoes on my kitchen counter and will definitely go and buy some aubergine tomorrow. I don't have a pestle and mortar but I will figure something out!!! 4 of my favorite ingredients - aubergine, tomatoes, garlic, parsley (not forgetting the oil, of course) I am really looking forward to trying it. One question: I have noticed that in some recipes (not only yours') that some cooks advise parchment paper and others foil - is there any gastronomic reason for this? I have the paper but don't use it much and tend to go with foil. Just wondering. Thanks!!!

      Foil is better for high heat (grill/broil). Paper for baking and anything delicate. For some reason, I can get crispier sweet potato fries with the paper
