- Aubergine or Eggplant is a delicious vegetable if it is cooked well. There are definitely some tricks to getting this right, including picking the aubergine itself! So join me as I show you how to make this delicious curry step-by-step, including how to pick them!

We made it to your recipe but because we dont have a pressure cooker, we microwaved the sliced Potatos in a lided plastic container with a little water to steam. The sliced Potatos were only half cooked and finished with aubergine in pan with 2 small dry birds eye chillies. Thanks again. Delicious. We will make another one of your recipes. Your videos are clear to follow.

I've got a pressure cooker now, not new, I think about late 90s model so I've made this dish up until the pressure part. I just need to go online and find out how this older model works. It's a Prestige which I had in the past so should all come back to me. A great video giving the kind of detail I like
Awesome! Yes, many pressure cookers are different and it’s good to get used to the one you have. It will become a good friend once you get to know it!!
Just remember to add a little water so the food doesn’t stick and to be careful to let the pressure release fully before opening it! Enjoy the curry 😊

We tried it yesterday. Curry is great. For me, eggplant was a difficult item as we have very limited recipes. Your recipe is the best and my feeling on eggplant changed. Tasted well with roti. Thanks.

Great advise on how to buy. Very clear instructions too. Except I do not know how long to pressure cook for as my whistle doesn't blow. What did you set Alexa time to?
Glad it was helpful! Yes, pressure cook it for 4 minutes, it should be fine. Then let the pressure release naturally. ENJOY!!
I can safely say that 5 mins in the instant pot with a natural release works. The potatoes were perfectly cooked and the aubergine was nice and soft. Smell and tastes just like "wedding curry". Thank you :-)

Quick question - you cooked it for 4 mins but how long would I cook it for if I don’t have a pressure cooker? Thanks!!
If you don't have a pressure cooker, it's fine! Cook it covered on a medium-low heat for 15-20 minutes or until your potatoes are nice and soft. Add a little water if needed. Enjoy!!

Hi there Yashmin! For an Instant Pot, if you are using normal pressure, do 5 minutes and for high pressure, do 4 minutes. (Some Instant Pots have different pressure settings). Let the pressure release naturally. Let me know if you have any other questions.

Cut the aubergine and put into salt n turmeric water then it wont change it colour.

I got a burn message on my instant pot when trying this, so I added another 100ml of water, tried again and still got a burn message :( So, I just let it simmer for about 10 minutes after that and it still tasted great.
Thanks for letting us know Nick. I wonder if there was not enough water? I did a quick search and found that the 'burn' message comes on if the sauce is too thick or getting dry to avoid burning the food. So maybe add a little more water next time. I'm glad to hear you liked the taste though :o)

Now I get it - so Americans say "eggplant" - I was confused as I had never heard that word before - I have only ever heard it called aubergine.
