    I'm just making this now and hoping for a good result. I appreciate the detail you provide such as the 'tempering' which I've only recently begun to understand. Your dishes offer a lot of options for me, a vegan. Also, you get the pace just right and remind us of the amounts as need as we reach each stage of the process, something many others overlook to do

    Is there a substitute for the fresh curry leaves?
    Should I use dried, or can I use something different? And will it change the flavour a lot?
    Still new to cooking, so any help would be appreciated!

    • @MilhaanHome
      @MilhaanHome  ปีที่แล้ว +1

      Awesome! Well, I'm glad you found my Channel!! Naturally, fresh Curry Leaves are the best! They can be found at any Indian or Sri Lankan shop. If you don't have access to it, dry will work, or you can make it without Curry Leaves and it will still be delicious. The Curry Leaves add a slightly flavour to the curry which makes it better, so stay on the lookout for curry leaves! You can freeze them if you find them fresh and don't use them up!
      Let me know if you have any other questions! I'd be happy to help!!

    Thank you again❣Questions; 1/why you do not use Ghee now? 2/ I learned to put fresh coriander on the end and never before🤔 My digestion is sensible so I must take half rice+hlf. mungdal beans. 3/ Can that be cooked together in the same time? 4/ You don't do joghurt in it, because of all the heat in it. Is there a reason for it? 5/ I take hlf vegatables+ hlf mungdal for the digestion. I never used HING so I love to try it ! Namasté🌹

    • @MilhaanHome
      @MilhaanHome  หลายเดือนก่อน

      Hello! In this recipe, you can definitely use ghee instead of oil for the tempering! I made it vegan, but ghee adds a delicious flavour, so try it!
      I put coriander in the tempering as it adds a different flavour than adding it as a garnish. You can add more at the end if you want. Traditionally, yes, coriander is added at the end for its fresh flavour and colour.
      I have a recipe for khiichdi (th-cam.com/video/fyVuITULja8/w-d-xo.htmlsi=0tyt4Fl-rs__fHq4) which is split moong beans and rice. Whole moong beans and rice won’t cook at the same time (moong beans need a bit longer). If the moong beans are split, you can cook them together.
      Kadhi (th-cam.com/video/iI0YQt9_ObI/w-d-xo.htmlsi=whRdrtzyBGuOH4LO) goes very well with moong bean curry or khichdi. You can make it with vegan yogurt or regular. Try this combination. It’s delicious and good for you!
      I hope I answered all your questions 😊🙏🏽♥️

    • @MilhaanHome
      @MilhaanHome  3 ปีที่แล้ว +4

      Wonderful! I'm glad you enjoyed it! You can buy Hing or Asafoetida in most large supermarkets in the UK. It gives the curries another flavour dimension and helps with flatulence caused by lentils.
      If you are vegan, I recommend buying Hing because it gives dishes some umami as it has a sort of eggy smell & flavour. I add a pinch of hing to certain vegan dishes I make and it makes a difference!

    Thank you chef. Can you please also make some recipes from plant based milk. I literally had sleepless nights after visiting dairy farm and witnessing what a horrific life the poor cows go through. They are pain fully inseminated every 6 months so that the calf is born. Calves are taken away immediately without a single drop of milk. Male calves are killed in the slaughter house on that very day. This process continues for some years till the cow is completely exhausted and later sold for meat. That’s the milk we consume and use in our puja 😞. I witnessed the 2 day old calves taken to the slaughter house and mother cow running behind him. I will never forget that day, the day I turned vegan.

    • @MilhaanHome

      Great questions! You do not need to soak the moong beans overnight. Just wash them then put them to boil.
      You can cook the moong beans in a pressure cooker, but the consistency will be stickier, so boiling on the stovetop is the best way to go!

      Yes. You can omit it this time and try it with them the next time you make it. I'm sure it will still taste good! But with those ingredients, it will be better!

      There seems to be something wrong with the Moong beans. If the Moong beans are very old, they don’t cook properly. Don’t throw them away yet though!
      Buy some some small moong beans and try again. If they still don’t cook, you may need to cook them longer. Sometimes altitude makes a difference and you may need to cook longer due to this.

    If you add the salt before the bean is all done, won't that slow the cooking process and make it take longer?

    • @MilhaanHome
      @MilhaanHome  3 ปีที่แล้ว

      Great question! By the time you add the salt, the beans are mostly cooked. Adding the salt at this time helps improve the flavour and keeps a great texture for the beans. Enjoy!

      Hi Prash.
      No onions in this recipe. I use onions in Chana and other pulses but not in moong like this. I suggest you follow the recipe exactly first and see how you like it. Then you can always make changes to the recipe to make it to your taste.
      Let me know if you have any other questions & happy cooking!

      @@MilhaanHome thanks, I have had this since I was a kid and have never had it without onions in the recipe. But I guess it's different for each region within Gujarat which is what makes Indian food so great. Also using a pressure cooker helps when cooking out the lentil (my mum gave me that tip).

    • @MilhaanHome
      @MilhaanHome  4 ปีที่แล้ว +1

      I agree! The variations make Indian food so versatile!
      As for using a pressure cooker, it does help cook the lentils quicker, but with regards to moong, it changes the texture and makes it a bit gluey. Try it both ways and see if you notice the difference. I cook most of my other lentils in a pressure cooker, just not the moong.

    You don't need to cook for 50 to 60 mins if moong is soaked in water and if you use a pressure cooker. :-/
