Great way of making Ghee, thx. Question, if we use the left over in the pan then what is the point of separating it?
Separating butter to make ghee removes milk solids and water, resulting in pure fat with a higher smoke point, longer shelf life, enhanced flavor, and suitability for lactose-intolerant individuals. Ghee is ideal for high-heat cooking, while the leftover milk solids can still be used in recipes or as a snack (if it’s from unsalted butter), so why waste it?☺️

Is the ghee unsalted ?
I make ghee from salted butter, but most of the salt comes out, so it doesn’t make a big difference ☺️

Why flip the puri the other side
So that the top crisps up. It is a thin layer, but you do want it to cook and the bottom cooks a little more too!

That would be a completely different recipe which I have not tried… but you can try it! Let me know how it turns out ☺️
Why are they called ginger nut cookies? I want to add nuts, so if I can use nuts in this recipe, what kind of nuts can I add. Thanks.
Even though they are called ginger ‘nut’ biscuits, they generally don’t have any nuts in them! But you can definitely add some if you like. I’d use almonds, walnuts or pecans. Try the original recipe first though and add some in half the batch so you can see which you prefer ☺️

Can they be baked?
This is a great question! I have air fried these by brushing the pastry with some oil first. They turn out ok, but deep frying is best. If you want to bake, you could try using puff pastry and making small pies, which is different altogether, but will still be delicious. In the spring roll pastry, I recommend frying. I hope that helps ☺️

You could try using any other type of powdered sweetener you like and add enough to taste. Let me know how it goes☺️

Dals are any type of lentil so a dal curry is basically a lentil curry☺️

I wouldn’t recommend fresh ginger in this recipe due to moisture. I haven’t tried it, but I imagine the biscuits would become soft. Thank you for commenting 🥰♥️

Sev sancha maker: A heavy-duty, stainless steel machine that comes with disc templates for making sev and chakli. It can also be called a sev machine or chakli maker. Amazon has them as well as Indian stores. I have it on my website too!

Hello Beta, Am thrilled to find this fish recipe. My family are from Bharuch in Gujarat near Surat. We are Gujarati Muslims settled in east london. The recipe u’re sharing now is the same as our family/Community cooks. I always wanted my friends to cook as we do but there was none on the youtube. At last now today i’ve found your ..this one .. am going to share with all my non gujarati mates. Couple of things i’ve learned from this recipe Are… chickpea flour slurry that gives extra body to the sauce + crushed black pepper for an extra kick. Instead we add fresh coriander paste with green chilli & couple of small pieces of coconut paste + we use kashmiri chilli powder too for nice bright colour.. & more oil for extra tarri.. so it shines and tastes 👌👌👌 Seems ur mum is from south gujarat .. around Surat Navsari, Billimora or Vapi, Valsad.
