    Aloo Baingan Curry is a curry which is typically eaten with plain basmati rice, roti's or naan bread.
    Aloo Baingan Curry was originally a staple of the village kitchen, this is a simple, nutritious meal which many are fond of making.
    Here is how I make my Aloo Baingan

    INGREDIENTS:
    650g Aubergines
    1/2 cup oil
    1/2 lemon
    2 medium potatoes
    3 medium onions blitzed
    jug water
    4 small fresh tomatoes chopped
    1.5 teaspoons of:
    salt
    chilli powder
    turmeric powder
    coriander powder
    garam masala
    dried chili flakes & dried fenugreek leaves
    3 fresh green chillies sliced finely (optional)
    1 piece of frozen ginger and garlic
    fresh coriander for garnish

    I made this yesterday and it's delcitous! I got distracted and overcooked it so ended up with a lot of sauce because the aubergines disintegrated however I added a couple of cans of chickpeas and it's now great as a main course with bread or rice.

    You won’t believe but this is the only vegetable Baigan that I don’t like.😀 It’s my husband’s favourite though so i do make with so many different combinations. Btw your recipe is very very very nice and I’ll try your way to see if i would start liking the Aubergine.

    Hey is it a necessity to have the aubergines slightly cooked prior to the actual cooking ? I thought I heard you saying that.. also do we boil the potatoes separately beforehand ?

      Farukh, I've never cooked my aubergines prior to adding them into the masala. They always cook in the masala and no I don't boil my potatoes beforehand.
