Made the meatballs yesterday.. the best I have made so far... Making the sauce today... not adding the beef.. but I am adding the pork, meatballs and hot and sweet Italian sausages. Thank you for your time and recipes..

If you want to tame the acidity from tomatoes all they have to do is add add carrot just cut the ends peel it let it cook in the sauce and then remove it you can only also do that with making spaghetti sauce marinara sauce old school trick just remember to pull it out after everything's c o m e together and simmered
Yes, that’s always an option, but I only do it if I’m running short on time. Time will always tame the acidity in tomatoes. Unless they are fresh and not ripe.

I'm doing this right now. St. Louis on a Weber charcoal with some hickory pellets. the beginning of the snake method. I bought a new ZEP spritzer because of this video.
Sounds good, you may have a problem getting the pellets to ignite at low temperature. But you may get some smoke off of them maybe. Let me know how they turn out. Thanks again!
@@godfatherbbqitalian No problem with the pellets igniting. I used B&B briquettes. Two on the bottom and one on top. I put the pellets on the first six inches or so. It was smoking like a pro. They came out great. Thank you for your videos! Norwell MA right up the road

i have never cooked a prime rib what temp and how long in oven for medium well
Depends on the size. 350 is a good temp to cook.135 to 140 internal temp is medium well .You’ll need to get a thermometer and check it .

Hey Godfather. There's been a lot of debate where I'm at as to what makes a proper 'arrabbiata'. Do you have a tried-and-true recipe for it you can recommend?
I wish I could say I do, but our family is not really into spicy sauces. But, from what I know of it from other parts of my family that are, it’s just the same marinara sauce as I make on the channel plus some small, real deal, Italian red chilies, diced up and put into the appropriate heat level of the consumer. Time and time and time again the best sausage flavor comes from staying basic and simple with ingredients. Get the fat content right. Get the salt and pepper percentages right. Get the signature spices right depending on type of sausage and thats IT. Dont throw in everything but the kitchen sink.

Great videos. Just finished both meatball videos and you make it look so easy I will definitely make them homemade for my next sauce. Seriously watching you why would I want to buy frozen balls from a store anymore. To me you’re bringing cooking back as it should be. My mother made this A LOT. It seemed like she just chopped everything up and tossed it into the pot, but we loved it! My grandmother(who lived with us) taught her how with depression era ingredients. We usually had enough for a few days. Then it was time for Jag then Beans on Sat. night and Sunday morning.
