Made this tonight and it was AWESOME. Making it on the smoker definitely gives it that perfect savory balance to the sweet sauce. I’ve had honey hog rub from meat church but ran out awhile ago so I used a KC rib rub that worked well.
Brings back some memories. I am thinking a good play off the way you're doing it it almost make like a meatloaf and cook it low and slow till it gets a little bark like people do with over the top chili but then break it up and adding your sauce.

@@godfatherbbqitalian I will let you know. I did make some cheese and parsley sausage this week I thought you might find interesting. My mother-inlaw from Staten Island is down and always asks about it. I made some jalapeno/cheese, chorizo, and boudin to round it all out.
