Breakfast Banana Bread Bars!! Oatmeal, Pecans, Chocolate, Raisins, Coconut!

  • This banana bread has everything in it!! It is very similar to cowboy cookies with oatmeal, pecans, chocolate, raisins, and coconut. This would be a very filling, healthyish bar to eat for breakfast ;)

    Breakfast Banana Bread Bars (bread granola bars)
    Ingredients:
    All-Purpose Flour: 2 cups (250 grams)
    Rolled Oats: 2 cups (180 grams)
    Baking Soda: 2 teaspoons (10 grams)
    Baking Powder: 1 teaspoon (5 grams)
    Salt: 3/4 teaspoon (4 grams)
    Ground Cinnamon: 3/4 teaspoon (1.5 grams)
    Salted Butter (melted): 1/2 cup (115 grams)
    Vegetable Oil: 1/2 cup (120 milliliters)
    Granulated Sugar: 2 cups (400 grams)
    Ripe Bananas (mashed): 6 medium bananas (approximately 2 cups mashed)
    Eggs: 4 large eggs
    Vanilla Extract: 1 tablespoon (15 milliliters)
    Raisins: 1 cup (150 grams)
    Chopped Pecans: 2 cups (200 grams)
    Shredded Coconut: 1/2 cup (40 grams)
    Chocolate Chips: 1 cup (175 grams)
    Directions:
    1. Preparation: Preheat your oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan and set aside.
    2. Prepare Wet Ingredients: In a large mixing bowl, whisk together the melted butter, vegetable oil, and granulated sugar until well combined. Add the mashed bananas to the mixture and whisk until smooth. Crack in the eggs, add vanilla extract, and beat until fully incorporated.
    3. Combine Dry Ingredients: In a separate bowl, combine the all-purpose flour, rolled oats, baking soda, baking powder, salt, and ground cinnamon. Mix well.
    4. Mix Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Do not overmix.
    5. Add Add-ins: Fold in the raisins, chopped pecans, shredded coconut, and chocolate chips into the batter until evenly distributed.
    6. Bake: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for approximately 60-75 minutes, or until a toothpick inserted into the center comes out clean.
    7. Cool and Serve: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Once cooled, slice the Cowboy Banana Bread and serve.
    8. Enjoy: Enjoy this delicious Banana Bread loaded with oats, nuts, raisins, coconut, and chocolate chips! Perfect for breakfast, snack, or dessert.

    Hello from 🇬🇧! Thanks for adding grams next to the ingredients. This recipe looks so good! 🤤🤤 I really don’t like coconut; do you think it’ll be ok if I leave it out and just increase the amount of oats/raisins/choc chips?

      Hello! So cool that you’re watching from the UK! You can totally leave out the coconut and you don’t need to increase the amount of other things.
