GIANT S’MORES COOKIES! Recipe for Chocolate chip cookie with s’more on the inside!

- I know I’m a little late to this trend but I am in love with these giant chocolatey s’mores cookies! The crispy graham cracker, the chewy marshmallows, and the melty chocolate. This is the next best way to eat a s’more if you don’t have a campfire!

S'mores Cookies
Ingredients:
For Brown Butter Chocolate Chip Cookie Dough:
Salted Butter: 1 cup (226 grams), browned and cooled slightly
All-Purpose Flour: 2 cups (250 grams)
Salt: 1/2 teaspoon (3 grams)
Baking Soda: 1 teaspoon (5 grams)
Cornstarch: 3 teaspoons (12 grams)
Granulated Sugar: 1/2 cup (100 grams)
Brown Sugar: 1 cup (200 grams)
Vanilla Extract: 1 tablespoon (15 milliliters)
Eggs: 2 large eggs
Chocolate Chips: 1 cup (175 grams)
For S'mores Assembly:
Graham Crackers: 12 squares
Chocolate Chips or Chocolate Squares: 12 pieces
Jumbo Marshmallows: 6 marshmallows
Directions:
1. Prepare Brown Butter: In a saucepan, melt the butter over medium heat until it turns golden brown and develops a nutty aroma. Be careful not to burn it. Once browned, transfer the butter to a bowl and let it cool slightly.
2. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, salt, baking soda, and cornstarch until well combined.
3. Combine Wet Ingredients: In the bowl of a stand mixer, mix together the browned butter, granulated sugar, and brown sugar until smooth and combined. Add eggs and vanilla extract to the mixture, beating until light and fluffy.
4. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Fold in the chocolate chips until evenly distributed.
5. Chill Cookie Dough: Cover the cookie dough and chill it in the refrigerator for at least 1 hour.
6. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
7. Prepare S'mores Assembly: Place graham crackers on the prepared baking sheet. Top each graham cracker with a piece of chocolate (or chocolate chips). Place a jumbo marshmallow on top of the chocolate.
8. Form Cookies: Take a portion of chilled cookie dough and flatten it between your hands to form a disc. Place the cookie dough disc on top of each marshmallow-covered graham cracker, ensuring it covers the marshmallow completely.
9. Bake: Bake the assembled s'mores cookies in the preheated oven for 10 minutes, or until the edges are golden brown.
10. Cool and Enjoy: Allow the cookies to cool slightly before serving. Enjoy the gooey, chocolatey, and marshmallow-filled delight of these S'mores Cookies!
