This recipe works, Took the sugar down to 190 on both because I used Ghiradelli 50% MIlk and 60% dark chips 600g (more than enough chocolate action), Almond and Hazenut extract and 375 for 20min. Probably take the sugar down a little more. Excellent recipe!

Just made this now. These are soooo good. Did not spread at all. I used Kirkland regular chocolate chips. Pro tip: (1) Use the food processor to chop the pistachios. (2) After you take out the cookies from the oven, sprinkle some flake sea salt to take the flavor to the next level. I will be doing this again to give to coworkers for Christmas. It came out to 17 cookies at 150 grams each.
I saw other videos telling the exact opposite (not to mix too much to avoid air so they don't spread), I'll try this approach and comeback to share the results.

I’d be more worried about margarine and seed oils in case that’s what you’re using instead of butter

Once you cream the butter with brown sugar, sugar and salt, then you add the brown butter to the mix.

So the written recipe calls for 1 stick of butter but it looks like you used 2 sticks of butter in the video. Slightly confused.
I realized that no one was going to want to make a huge batch, so I halved it in the written one :)
