Healthy, Gluten-Free Banana Bread with 100% Oats (no refined flour!)

- Hello my Tastebuddies, welcome back to my channel! Today, I'm sharing a recipe that's become a total staple in my kitchen: a healthy, gluten-free banana bread made entirely with 100% rolled oats and absolutely no refined flour.
I love this recipe because it's delicious and wholesome. It's perfect for those mornings when you want a treat that's satisfying and good for you at the same time. Plus, it's gluten-free, which makes it a great option for anyone with dietary restrictions or sensitivities.
Some baking tips:
1. if you're making this for the first time, halve the recipe just in case you can only use 1 medium pan at a time.
2. muffin liners work great too! I like to make a big batch and freeze them so you can have a nice healthy snack whenever that craving hits!
3. every oven is different, so please keep checking with a skewer after the 45-min mark. my medium-loaf banana bread took about 75 mins to cook!
4. if the top is already brown before it's cooked, cover with aluminum foil to keep it from burning.
5. when cooling on the wire rack, be sure to also remove the parchment from the banana bread so the steam can come out.

Recipe:
4 very ripe bananas
225 gr oat flour
135 gr rolled oats
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
2-3 eggs (2 large/3 small)
200-250gr coconut sugar
180gr butter
218gr Greek yogurt
1 tsp vanilla extract

Hi there, you can try plant-based yogurt or coconut cream if you don’t mind the coconut taste! Please keep in mind that the texture might be different, if you do try it please come back and let me know how it went! 🥰
Can you replace the butter for olive oil or maple syrup?
Hello! Replacing the butter with any neutral oil should be okay. If using olive oil, maybe use extra light olive oil instead of extra virgin olive oil so the taste isn't too strong :)

I want to try this recipe today , but did not find any coconut sugar. Can I use regular raw sugar?

@@lisafisher4812aww I’m glad you enjoyed it! Yes the height of the loaf pan itself matters, mine was pretty tall to begin with :) Maybe you can try using a narrower pan next time? Or if you want to use one pan only, just be careful to not overfill it (3/4 of the pan maximum) so it doesn’t explode 😅 Let me know how it goes! 🤍
