Low Carb ENCHILADAS SUIZAS - The BEST Keto Enchilada Recipe - Enchiladas Suisse

  • Join us for a low carb recipe remake! Today, we tackle a favorite recipe for Enchiladas Suizas, also called Enchiladas Suisse. This delicious, creamy, casserole-style dish easily lends itself to a low carb version with a few alterations from the original recipe.
    The original recipe comes from the popular cookbook "Some Like It South!" by the Junior League of Pensacola. You can find out more about the Junior League and the cookbook at www.juniorleag...
    For this low carb version, we needed to replace the tortillas with a low carb alternatives. You can use a commercial low carb tortilla if that fits in your diet plan and goals. Otherwise, we recommend using the popular Low Carb Tortilla recipe from Keto Connect. It can be found at www.ketoconnec...

    LOW CARB ENCHILADAS SUIZAS / SUISSE
    1/3 cup chopped onion
    1 clove minced garlic
    1 T. bacon fat or oil
    8-ounce can tomato sauce + 1 can water
    4-ounce can chopped green chiles (do not drain)
    3 cups chopped, cooked chicken
    2 cups heavy whipping cream
    1/2 cup water
    4 chicken bouillon cubes (or equivalent)
    1/2 pound grated Swiss cheese
    Salt & pepper to taste
    10 low carb tortillas from Keto Connect

    1. Over medium heat, saute the onion in the oil util soft and translucent.
    2. Add garlic, tomato puree, chilis and chicken.
    3. Simmer for 10 minutes. Season to taste with salt and pepper
    4. Gently heat the 2 cups of heavy cream and 1/2 cup of water over low heat and dissolve bouillon in cream.
    5. Fill each with 1/4c. chicken mixture. Roll up tortillas and place seam-side down in a 9x13 casserole dish.
    6. Pour the cream mixture over tortillas and sprinkle with the grated cheese.
    7. Bake at 350 degrees for 30 minutes.
    Makes 10 Enchiladas

    Total Carbs: 8.5g
    Fiber: 1.8g

    Wes, this is not only the best low carb recipe I've ever made, it's in my top 5 favorite ANY recipes of all time. Truly - they were so dang delicious, and the homemade tortillas knocked it out of the park! Please keep on with the awesome show.

    Suggestion for the sauce: take the water you would add to the heavy cream, heat it in the microwave, and dissolve the bouillon cubes in that. Then simply mix that with the cream when you're ready to pour over the enchiladas. Then you don't need to heat the cream and worry about it scalding.

    I would like to report that I made this dish tonight... I made the Keto Connect tortillas (my pan made 13 but I used 11) and followed your recipe. They turned out great, the tortillas don't taste eggy, and there was plenty of sauce... I would make them again but add more flavor in the meat mixture. I paired this with Spanish Cauliflower Rice and Garlic Green Beans and it was a great low carb meal.

    Mexican cuisine has changed drastically over the last 50 to 75 years. What my grandfather ate at his ranch in Matehuala, SLP back in the 30s and 40s is not what people are eating nowadays. My grandfather tells me the foods they used to eat and how it was prepared and its nothing like today. Most things were cooked in lard and their corn tortillas were not sweet corn like nowadays. It was really Indian corn which has less carbs and more fiber. They ate quelites, nopalitos, verdolagas and many other native plants. Their meat was fresh and usually killed the same day. They didnt drink cokes until the late 60s and 70s. My grandfather is 94 and strong as a horse. All his brothers and sisters have lived over 95yrs. If you want to make that chicken a little more flavorful add a little comino/cumin. Just a pinch goes a long way. Otherwise those look awesome and Ill probably make them next week! Oh and tourist have brought everything from cheese, beer and accordions to Mexico for at least 150yrs. Saludos from Dallas, Texas.

      This is a wonderful post, Frank! Thank you for sharing! It reminds me of stories from my own grandparents who lived on their farms and raised most of what they ate. Both animals and vegetables. Times were so different then, which is why they had such wonderful long lives. Our modern conveniences are slowly killing us! Thanks again for the beautiful and thoughtful comment.     Made these tonight. Easy & Excellent. Only change I made was that I followed Joe Duff’s tortilla recipe off his TH-cam channel, as they were only 1.5 grams of carbs. Love, love, love your channel and how you compare recipes. Saves me so much time!

    Where have you been all my life? I have tried to eat low carb in the past but end up stopping because I just can't stand to eat another bite of steak and broccoli. A couple of weeks ago my doctor advised that I am pre-diabetic and had to eat low carb, exercise, lose weight and come back in 6 months. I decided that I have GOT to try to find better low carb recipes, got on TH-cam and there you were! I adore you!!!!! Thank you so much for the time you put into this!     I just tried this recipe and I gotta tell ya, it's a BIG hit in my house! I made it with dairy free half-and-half with no cheese, and it was still incredible. I doubled the recipe and it was gobbled up by my family in no time. The filling is so good that I was stealing bites out of the pan before it even made it into the tortillas!

    So glad that here in the UK food labels are accurate by law and everything is labled by 100gms so we know that hwc has 2.6gms carbs per 100gms, we measure everything in grams not cups more accurate

      Mandy Lovett It is my understanding that listed carbs in the UK actually net carbs. So you cant subtract listed fiber from the carbs shown.

    Sanborn is a Mexican department store. Their cafe is famous for the enchiladas and their waiters/waitresses wear Mexican garb. A tourist must in the big cities. Will try this. Thanks Wesley!

    OMG I made this last night for dinner. I used store bought low carb tortillas. My husband and son were crazy about it. I almost had them take me to a Mexican restaurant, but decided I would not break Keto and make this instead. They got refried beans and tortilla chips, but I just ate two of the enchiladas. So filling and so wonderful. Thank you for another fantastic recipe.

    I am excited to report that my husband’s A1C dropped from over 14 (it was off the chart-chart only goes to 14!) to 9.3 in one month (yes, it’s a 3-month measurement but the doctor re-tested after a month). This is in no small part because of all of the recipes and valuable information Wes shares! I have made no less than 5 meals from this channel (most more than once!) and my husband has stopped treating his diabetes like a punishment, and now understands that living life in the low carb realm is enjoyable and fulfilling.     Just made this tonight...sooo yummy!!! A couple adjustments I made was I added some cream cheese and a handful of the shredded swiss to the cream sauce, I added some cumin, oregeno and smoked paprika to the chicken filling because I love seasonings! Tends to kick things up a notch! Then topped with tomatoes, sour cream and our favorite hot sauce. Thanks for sharing you have really helped make the low carb life flavorful! ❤

    OMG Wes, Shame on you between this recipe and the Taco's i could get into trouble fast mister.You are so fun to watch and you don't play when it comes to food. I love that you break it down to the very last carb no sliding carb's in with seasonings and turning a blind eye to them and honest about the taste.I still go back and watch the cloud bread when your flip it off when i need a laugh.     That's absolutely miraculous that you can lower the carbs that much. The dish turned out to be about a 1:1 ratio of Fat to Protein & Net Carbs. Amazing. It was still filled with wonderful savory ingredients and if you wanted to increase the Fat part 0of the ratio jus top with sour cream and/or guacamole. Throw on a few olives too to garnish.     Yes, enchiladas suizas did begin in San or s in Merida, Yucatán. Yes cream and cheeses, quesos Oaxaca, chichuaua, manchego are Mexican cheeses.

    The Yucatan was settled by lots of folk from the Netherlands during the Spanish occupation. There was a great deal of cultural exchange between them and the indigenous population. It is very common to see Edam and Gouda used in traditional recipes hundreds of years old.

      Not really. I've no doubt that some settled there but the last names have not survived, as English last names (from pirates) HAVE survived. The fact is that both Spanish and Maya really loved their Swiss cheese. From that mestizaje came Yucatecan cuisine. They traded Sisal fibre and produce for a lot of European goods. But definitely cheese.

    I enjoy your videos!! I am a southerner, too (I have lived in central Florida all of my life). My husband is still not completely sold on the low carb way of eating, but these enchiladas are right up his alley. I watched your cornbread battle; splurged and ordered the sweet corn extract, because, lord, I need some cornbread to go with my pot liquor when I make collard greens. Keep up the excellent work!!

      These are SO good! I've had great success with the Keto Connect recipe lately. Biggest tip is to buy a carton of 100% egg whites (NOT "Egg Beaters".) The egg whites in the carton seem to be more liquid-y than fresh egg whites, and this helps the consistency. I also add a couple extra tablespoons of water to the recipe. Nonstick pan, coconut oil spray, medium heat, 1/4 c. measure, rotate pan to cover, flip in 2 minutes. Let me know if you try them again!

    i'm joining the chorus of folk saying how great this recipe tastes although I "cheated" and used store bought whole wheat low carb tortillas. Here's a tip: dissolve the bouillon in the 1/2 cup of water before adding to the cream. Thank you so much for working this out. This is good enough to serve at dinner parties. And it looks so elegant. No one would ever guess it's low carb or even question it. And, I can't believe how easy it was.

    Turned out great! I used the crepes from Costco, 0 carb made of cauliflower and egg whites. They were to thin so I doubled up. I coated them with a tiny bit of taco spice before putting the cream. I added 1 Tablespoon of the corn flavoring you recommended, the amoretti, to the cream and it made the whole dish smell/ taste better ( I don’t really love these crepes, so that covered them up). Came out great! Thank you so much!

    So with this I learned that enchiladas is just Mexico for what we call pancakes um Brazil (really thin batter, roll up your filling, put It in a tray, cover up with sauce - usually tomato - add cheese and bake). Its really good! Grew up eating them and could go for some right now!

    Love your videos Wesley! This recipe looks delicious, I am definitely going to make this recipe. As an fyi, I eat the original Sanborns recipe all the time. You would love them. Sanborns is a chain, kinda like Denny's. Their recipe is actually made with tomatillos, chile poblano and La Suiza brand sour cream. That's why it's called Enchiladas Suizas. No tomatoes. Anyway, if you're ever in Baja California, I'll take you to Sanborns. Keep up the great work!!

    You are 100% correct. 1 cup of heavy whipping cream has exactly (depending on brand but really close all across the board) of 3.3 carbs per cup.

      How were their tortillas? Were they good? (Being raised in a home where my mom made her tortillas from scratch, I can admit that I’m unfortunately a bit of a pretentious snob with tortillas, but I need to find a good low carb substitute!) Thanks!

      It's a vessel 😂 I personally use lettuce cups for my tacos because these were a bit disappointing when you're use to a nice soft corn tortilla (they work pretty good for enchiladas ) They have ZERO flavor

    I've been making Ketoconnect's tortillas for a year now and using them in the recipe they call Breakfast Enchiladas. I can't tell the difference between them and regular corn or flour tortillas in taste, when made in a dish. I can't wait to try this! I'll make it tomorrow. Thank you! I love your videos.

    Made this for dinner tonight and I have to admit, I cheated and used store bought low carb tortillas, but oooweee! This is a great recipe. We loved it. I wholeheartedly agree about salting the filling. The sauce is plenty salty so I’m glad I didn’t add any to the filling.

    You can search for mexican enchiladas suizas recipes and compare. That one looks, so much hard work, so different from the simple version we have in Monterrey, Mexico.
    If someone wants to reign in the fat and calories, switch the sauce (just tomatillo with little onion, cilantro and bouillon cube). You also can have just shredded chicken. Don´t need to use all that seasoning, just... salt. Maybe onion while it cooks, but just shredded chicken is ok. The star of the recipe is the sauce.
    When I was about 6 (1996), Enchiladas suizas was my favourite meal. My nana made them with tomatillo verde, mexican cream and any cheese. Swiss cheese, manchego cheese, gouda cheese (gouda is my favourite). I had these every Tuesday for lunch.
    My mum around 2010, tasted a creamier version heavier on fat, it had cream cheese. She added a bouillon cube, onion, and cilantro to the sauce. That´s it. Everyone asks for seconds and thirds when she makes these enchiladas.
    Also, fried the tortilla before placing the chicken. Fry it, some shredded chicken, roll it and sauce and cheese. Microwave results (1-2 min) are better than oven because it doesn´t dehydrates as much.
    Because I´m cutting some fat (moderate fat and no carbs), I just dip it in the sauce on both sizes before rolling it.
    You can also make a lasagna of sorts with this sauce, chicken and tortillas. I think it´s called Pastel Azteca.
    Sometimes I make cauili rice and cover it with the sauce, it´s so good.

    Hey Wes, many years ago I was importing antiques from Mexico. I was shocked to learn that Mexico has had many major migrations from Europe! - German, French, even Chinese, and they all brought "stuff" from their countries. I ate at a Swiss Pastry Shop in Mexico City that would have blown your mind. I know! Who would have thunk it?

    I second your comment about store bought tortillas. For a few years, I’ve been using Mission Low Carb Tortillas, like multiple times per week. I recently did a blood glucose test after eating one. Wow, it spiked like I couldn’t believe, I went from 105 to 180 in 90 min.
