I was sitting here having a whole conversation with you while you were talking about making soup out of carcasses and wilted greens. The other day I went to get some baked chicken for lunch and found that the bones were pretty bare. While I was rummaging for something different to eat, I noticed that my baby spinach was getting wilty; so I boiled the carcass, fished the bones out and picked what meat was left, put the spinach in the broth to cook down, added back the chicken, put a little cream and a hint of nutmeg in it, and made a fabulous soup that I ate for two days.
Wonderful! Making your own bone broth really adds a lot of flavor to soup. My favorite is smoked Turkey broth. Smoke a Turkey in a smoker or traeger grill and use the leftover carcass to make Turkey soup. It’s amazing!
We once were in a situation of having almost no money for a month. We ate turkey soup all month and never again after that. Any other meat and I'm there. I still love soup! (just not turkey).
@KetoFocus just bought jeniO turkey breasts, & they're now adding sugar to the solution they brine them in b4 freezing... salt, sugar then water, & spices! How crazy. Plus, they can claim it's 0 added sugar, bc by volume the Turkey is percentage bigger. Tell that to my blood sugars after eating the stuff... no more frozen turkeys I guess 😢
You may want to try using non flavored coconut oil (expeller pressed) or avocado oil since they cook at higher temperatures. Using olive oil at high temps causes the oil to oxidize. Best to be used in dressings or cool to slightly warm dishes
I've been watching your videos for the past 2 months and you have save me so many times. I didn't know what to eat on keto until I met you! I struggle with neurapathy and chronic migraines and feel constantly bloated, had reflux every time I ate certains food. For the past 2 months I tried going low carb as much as possible and I'm gradually decreasing carbs from my diet. My stomach use to be so bloated that I looked pregnant, I thought was just fat but now I think that sugar and simple carbs are reaponsible for that. Now i can see my real belly, migraines are manageable and insomnia is getting better. I use to stay in bed in pain and going at the gym was difficult and now I'm going every other day and feel so much better. Thank you ❤

We had a black lab (Midnight) for 16 yrs, she was the smartest dog ever! We miss her so much. My daughter trained her (great project for a 13 yr old adolescent) Besides the normal sit, stay, lay down she would pretend shoot and say bang bang, and the dog would fall down! We could put a dog biscuit on Midnight's nose and she would balance it and wait until we snapped our fingers then flip it up in the air and into her mouth.
Awww 😊 A friend of mine used to have a black lab named Midnight. We had taught one of our labs to play dead. 😆 So far, Whiskey knows how to sit, come and lay down.

I wonder if carbs from carrots and onions leach out into bone broth? I still use them, esp the carrots add such flavor even though they are so carby, just curious. I saw a You Tuber puree onion saying the flavor was increased but using less onion. I may try that also. You could maybe freeze onion puree into ice cube trays for quick use? I made awesome soup last week with bone broth, diced chicken, one diced carrot, onion, celery and kale, I was surprised how good it was.

You need to learn how to start canning your homemade stocks (bone broths), super easy and they don't take up freezer space. We raise all our own meat so I always have the bones for making stock right after fall butcher, but you can buy organic ones from small butcher shops that are healthy and not grocery store mystery raised.

I love pho! But authentic pho is very time consuming. I think this is a good compromise! I think I’ll try it! BTW, when you’re ready to plate, you add the hot scalding broth to the bowl with the noodles/veggies/meat.
I like to make broth with oxtail and some other beef bones then make a nice soup. My dog LOVES the oxtail and the broth Or I do a whole chicken in a pot with some extra feets. If I shop at the Asian grocery I get literally a whole chicken with the head... Yea, I know. I never get used to peeking in the pot and seeing that head 🥴. It is a shame you have to explain using onion and carrots in soup, but I understand. I definitely cook with onion. Less so carrots, but just because of personal preference. One wee little thing ... I think you should say "pressure cooker" rather than "instant pot." It is a brand of pressure cooker but there are a lot of other brands available too. I have a Ninja foodi which is a pressure cooker, slow cooker, air fryer, dehydrator, steamer, saute'r ... what am I forgetting. It does everything Except I make my bone broth on the stove because if I am going to do that I want to make a lot. thanks for the recipes.

I like this video. I know you added tomatoes. What can I use to replace the tomatoes? Tomatoes are Nightshade veggies. If you going to eat then, you must skin them and take out the seeds. Or pressure cook them.

I wonder if it's because of the Western alphabet; we all use the same one, but British, Americans, French people, and others with strong presences in Asia pronounce things very differently. (I looked up "Peking" out of curiosity, and the difference between it and "Beijing" is that Chinese pronunciation is somewhere near but not the same as both variants. Supposedly "B" in Beijing is as close to "P" as it is to "B," but the letter "B" is always recognized in China to represent the sound that it represents in "Beijing." I have diabetes. Important for me to control my carbs. My wife brings lots of cookies, cakes, sweets home (NOT a help) I just subscribed. I am also picky. No fish sauce, no ginger, no cinnamon no cloves. I like phone w/o noodles and substitute bean steamed bean sprouts. I didn't know onions had carbs. Thanks

I never thought of bean sprouts as a sub for noodles, but I'll have to try it. I don't like fish/seafood but it's been my experience that you can leave those things out. Or, if you need a darker, umami flavor, add coconut aminos instead.

BTW, when you’re ready to plate, you add the hot scalding broth to the bowl with the noodles/veggies/meat.
I like to make broth with oxtail and some other beef bones then make a nice soup. My dog LOVES the oxtail and the broth
Or I do a whole chicken in a pot with some extra feets. If I shop at the Asian grocery I get literally a whole chicken with the head... Yea, I know. I never get used to peeking in the pot and seeing that head 🥴.
It is a shame you have to explain using onion and carrots in soup, but I understand. I definitely cook with onion. Less so carrots, but just because of personal preference.
One wee little thing ... I think you should say "pressure cooker" rather than "instant pot." It is a brand of pressure cooker but there are a lot of other brands available too. I have a Ninja foodi which is a pressure cooker, slow cooker, air fryer, dehydrator, steamer, saute'r ... what am I forgetting. It does everything
Except I make my bone broth on the stove because if I am going to do that I want to make a lot.

I like this video. I know you added tomatoes. What can I use to replace the tomatoes? Tomatoes are Nightshade veggies. If you going to eat then, you must skin them and take out the seeds. Or pressure cook them.
You can just omit them and make a more traditional beef stew. Add chicken or beef broth - more keto friendly veggies.

Asian languages are confusing. I wonder if it's because of the Western alphabet; we all use the same one, but British, Americans, French people, and others with strong presences in Asia pronounce things very differently.
(I looked up "Peking" out of curiosity, and the difference between it and "Beijing" is that Chinese pronunciation is somewhere near but not the same as both variants. Supposedly "B" in Beijing is as close to "P" as it is to "B," but the letter "B" is always recognized in China to represent the sound that it represents in "Beijing." The reason why the second consonant is represented by both "k" and "j" is even more confusing.)

I received an Instant Pot for Christmas. Wonderful. This year I bought an Air Fryer. Super good.

I have diabetes. Important for me to control my carbs. My wife brings lots of cookies, cakes, sweets home (NOT a help) I just subscribed. I am also picky. No fish sauce, no ginger, no cinnamon no cloves. I like phone w/o noodles and substitute bean steamed bean sprouts. I didn't know onions had carbs. Thanks

Thomas - All fruits and veggies have some carbs. Thank goodness for the internet, and labels, these days. Stay strong. (Sorry that your wife isn’t supporting you, though.)
I never thought of bean sprouts as a sub for noodles, but I'll have to try it. I don't like fish/seafood but it's been my experience that you can leave those things out. Or, if you need a darker, umami flavor, add coconut aminos instead.
