    My late hubby was born & raised in Jackson, MS and first time I made him cornbread from scratch he said, "Honey this cornbread is sweet", I replied, yep I put sugar on the top of it...well he ate that cornbread because the guy loved me so much, from then on out I made it for him w/o the sugar.....Cause I loved him.

      I'm from Biloxi MS our cornbread is white cornmeal and buttermilk but now that I am eating Keto I tried the first recipe and it was delicious.

      I'm a Mississippi Gal myself. I grew up without sugar in my cornbread. But I do put about 2T of sugar in my cornbread. You really can't taste it tho. I make my cornbread from scratch with some homemade soup.....Have Mercy!!!

    From southern Alabama here: My wife’s grandma’s corn bread recipe was corn meal and water, fried in bacon grease (in a cast iron skillet, of course), crisp on the outside, done on the inside. Served piping hot with butter. Great!

      thelen72 Wow. Thank you. That's one of the best comments I've received. I'm just learning video production and TH-cam in general, so I hope my videos get even better.
      I'm a "cord cutter" that dumped cable for streaming. The thing I missed most was cooking shows. I spent my early adult life watching Food Network and PBS cooking shows non-stop. Not the 2010's Food Network-style reality competition shows, but the old-school Food Network shows like Alton Brown and Mario Batali and Sarah Molton. After cutting the cord, I found I wasn't watching much "regular" tv, but I missed those half-hour shows of information and just COOKING. So, I decided to get off my fat butt and start making my own! I figured if *I* liked watching someone cook for a half hour, then maybe other folks did, too. Even if I never make the recipes, engrossing myself in low carb media keeps me focused on my goals of eating well and improving my health. So I started this channel. And comments like yours make it so worth while. Thank you, thank you, thank you. ❤️❤️❤️😍🙏🙏

      It depends on where you grew up. Unsweetened cornbread always seemed somehow deficient to me. I love Jiffy mix. LOL

      I have recently started trying keto and one of my first explorations was wraps. I told my dad all the recipes I tried were essentially crepes!! That eggy taste.. I enjoy eggs but guys come on.. egg on egg on egg.. not for me. Rather just have eggs. Haha!!
      Look forward to exploring more on your channel. I keep a kosher diet so the last recipe, which I knew would win, is one I can't make. BUT you really sped up my time to play with the best components of these and work with the combos I can have. This was my first time here. Am grateful for your work and look forward to sharing more!!

    Re-do the almond flour one, take away the sweetener, add a little baby corn AND the corn flavoring.. i think you'll have a winner.

      That was definitely the direction I anticipated going, but I honestly much preferred the texture of the protein-powder version. I'm definitely going to try your idea for making cornbread for cornbread dressing! Thanks as always for commenting, Christian!     The less extravagant items per recipe the better. I have spent SO much money on all these ingredients, and every time I turn around, a recipe calls for yet ANOTHER expensive ingredient. I'd love to see a recipe book that ONLY uses the basics, like the first two recipes you prepared. And yes, southern cornbread is NOT sweet! Great videos, by the way!!!

      I agree.! I am so tired of ordering weird stuff from Amazon! You can never get all the ingredients! I can't even find the stuff I have because there so much crap. Just when you think you have every baking ingredient know to man somebody puts our a keto recipe with Lupin Flour.

      I had to empty my biggest, deepest cupboard just my personal Keto ingredients, as they've taken over & the family is all please, please make a home for them bc we're tired of seeing them everywhere...
      Everything else had to be relegated back into our main pantry, otherwise it would have had to have been tossed out for lack of room... Keto is taking over our space, & it feels like it's never ending!!

      @frankschwartz7405 LOL... we're literally making separate meals for just me at this point, bc my carb threshold is so low. It's frustrating to eat differently than everyone else for every single meal, even if what I'm eating might be similar... it just takes so much time.
      I find myself eating the same darn thing over & over again, bc I can just batch/bulk cook it once a wk, portion it out, & reheat it without thought. There might not be a lot of variety each wk, but it's easier... I'm also kind of a creature of habit, so I'll get on a kick for one flavor profile & be able to eat it for several months b4 I'm sick of it, luckily enough. So far, I haven't burnt myself out of any of my favorites... 11 months & counting!

    I just happen to be watching this video for the first time on Father's Day 2021. I was born and raised just outside of Atlanta, Georgia. My parents loved and prepared cornbread all of the time. My dad was born during WW2. I distinctly remember that he loved to put cornbread into a tall glass and pour buttermilk over it. To him, it was a treat. 😊

    I found a much cheaper extract on Amazon for us broke folks! Its called One on One Flavors: Cornbread flavor concentrate! Its $9.99 for a 2oz bottle and only takes a few drops for a batch of keto cornbread.

    I know that this is a pretty old video ... but you can make the pork rinds and corn extract recipe and cook it in a larger cast iron skillet. I do it all the time and it turns out amazing! You get that traditional sizzle AND you get the "crust". It's amazing.

    I'm a Mississippi girl and sugar in cornbread is a no-no. We refer to that as sweetbread, not cornbread. I've always made my cornbread in a cast iron skillet coated in a layer of bacon grease. You can throw in some diced yellow squash for color and to fool some people who like corn in theirs(such as my husband). Shoot, jazz it up even further and add a little diced jalapeno, onion, and shredded cheese.

    This is one of my favorite videos, Wesley! I love jalapeno corn bread as well.I like your idea of combining the best of each of these recipes! No sugar or coconut with chopped baby corn for texture, sweet corn extract for taste and pork rinds. Plus, I would try using that extract in all corn recipes.

    Okay now, lol. I was born in TX and sweet cornbread and red beans or sweet cornbread and black eyed peas was a must growing up. I still add a tiny bit of sweetener. It should be savory sweet. Not cake or cookie sweet.

      Sugar simply overpowers the corn flavor of corn bread. I can remember my first wife getting a glass of iced tea and then pouring in sugar until the glass was at least one third sugar and then trying to stir it in. Kind of like tea flavored sugar. I still cringe today fifty years later. I haven't put sugar in tea or coffee since I was a kid. If you avoid sugar then foods start to taste like the food should taste.

      For sure.....but if you use buttermilk you need to add a little of something sweet to off set the sour milk....I use about a half-tsp. only....and it is not sweet at all.....

    Thank you! While on rare occasions I enjoy a sweet "corn bread", that is not my idea of real Southern corn bread. I grew up here in Georgia with my Mama making it like you said, in that hot greased cast iron skillet and getting that amazing crust! Not much better than a hot, buttered piece right out of the oven. :-) Love your videos.

    I just made corn muffins. I used corn meal, almond flour, stevia,baking powder, coconut oil, egg, salt, one percent milk... they rose up well, hold together well and taste great.

    Took the cornbread recipe from OOO Cornbread Flavors box and added that great idea of roasted baby corn bits and OMG! It took me back to pre-keto SaraLee Corn muffins, in the best possible way. Thank you for making everything seem do-able and for your great on-screen personality. I'm afraid to watch your "update" video because I'm afraid you might change direction, but I would love to see more from you! Taste tests. Shopping. Whatever you do...I'm there! Love you!

    Hi Wes. I just made the almond flour corn bread with the added mashed baby corns. Yummy. I also substituted the water for all the corn liquid from the can of baby corn. Yummy. It's really corn flavour. I don't need the corn flavouring extract. Thanks again.

    Definitely making the Baby Corn Bread. Great tips, especially using cast iron skillet with butter on the bottom. My southern grandmothers both added bacon fat & melted butter to the batter. Yum! 😋

    When I first moved to NYC from Mississippi, I remember being thrilled when i found that the bodega across the street from my workplace had individual servings of cornbread, wrapped and ready to go. I bought one for a snack and, when I bit into it, was horrified.
    It was sweet!
    GAG!
    What was worse, no matter where I went in the city, anyplace that served cornbread served the sweet stuff. Slap a bit of frosting on it with a small candle and it would have been perfect for a birthday party.
    I did find one restaurant that made it "Southern Style," after a while, so I was safe.

    yeah, I was born and raised in the Western United States and we didn't really have Southern cornbread- my mom made what she called "Johnnycake" and every once in awhile she would include chopped up fried bacon in the batter and cooked it in with the cornbread but it was a little bit sweet- so you guys are right about that- depends on the area of the country you're from what type of cornbread you actually grew up with- I would like to try the Savory kind but I think I'll always enjoy Johnnycake as well ;)

    We always enjoy your comparisons. My folks were from the south and we never had cornbread with sugar in it. I enjoy your southern humor. It reminds me of all of my family that lived in the south. I even caught your "peep eye", lol. It's been years since I heard that phrase. I do like grinding up pork rinds and combining them with parmesan cheese and using them as bread crumbs or in place of crushed crackers in meatballs or even meatloaf. I will try them all, but I am sure I will enjoy the one with pork rinds if I can afford the extract. lol

    PS: I always use a hot cast iron skillet and heat the bacon grease in it as the oven is preheating so the outside is nice and crispy...the next day my west Texas born husband of almost 39 years, eats some of the leftover cornbread in either sweet milk or buttermilk neither of which would I touch unless I was starving....and, again, to a recipe of cornbread batter to fill a 9” cast iron skillet, I only use about 2 Tbsps. of sugar and it has never been compared to cake.

    That flavoring is the bomb, isn’t it? I have one in my pantry and it smells so delicious, and it actually makes low-carb cornbread tastes like cornbread!

    You are so right! Southern cornbread is not sweet and cast iron skillet in my family too! However, you can't tell my husband that. He loves his cornbread a little sweet. I'm from Tennessee and we never put sugar in our cornbread, but my husband grew up in Texas and his Mother put a little sugar in her cornbread and he loves it like that! I really enjoy watching you cook and your comments are hilarious! You do need your own show on the Food Channel! Keep the videos coming - love you!

    Baby corns make the best cornbread used with almond flour with pork rinds. It hasn't developed the sugar/carb content, yet has the taste of corn. Don't forget to brown the crust in cast iron.

    Hi Wes! I just discovered you and I ❤️ you. I am making my slowly through all o f your videos and I have made 3 recipes from your battles. All were winners: chocolate cake, French fries and the latest cornbread. Oh my word! They were all better than the next. You have my confidence 💯. Just so you know, I got sizzle when I dropped my cornbread batter in the dishes. I left them in the oven longer than 5 minutes. Because I am like you....that sizzle is everything! I wish I could send you a picture. They came out perfect. Added some chopped jalapeños to mine though since I like it spicy... Stay well and thank you for the service you are doing...       Ummm, I’m Southern born & bred (Georgia) as are all my family. Everyone puts sugar in it, so... maybe it’s a state to state thing? Not a lot. My grandma from Alabama put less than my Florida grandma but still sugar. Definitely use the cast iron though. Heat the oil in the pan while mixing the rest of the ingredients & then pour hot oil in last, just prior to adding mixture to pan. And nobody put actual corn kernels in there. Gross! 😄

      BZT WRONG we eat it in Georgia too lol we like our cornbread sweet just like we like our sweet tea sweet most Southern states don't make their tea sweet enough lol. Boyfriend is Canadian and they don't use sugar so I think he has it backwards.

    I cook cornbread almost every day. Sometimes I cook multiple pans. I like it plain, fancy, thin, thick, baked and pan fried.

    Hi, the dietitian said one can eat Baby corn on keto. She said: " An entire 15 oz. can is only 8g of carbohydrates, but contains 6g of fiber and 4g of protein." I was soooo happy to hear that. So go ahead and ENJOY.

    I want to try the 3rd one, that looks great!
    I tried Dennis's fake cornbread recipe on his Black Tie Kitchen channel, it was excellent. He also uses Amoretti. I have a less expensive corn flavoring that I used. It takes more, but it's still pretty good.
    Dennis's recipe uses a small amount of allulose, (not enough to make it sweet, but it helps keep it moist) and bakes it in a cast iron skillet. I was amazed that I have one that fits in my countertop oven. My real oven is broken, that's all I have for now.
    I like sweet corn bread, (call it cake, I don't care!) and added extra allulose, and it still barely tasted sweet to me. So you might like his.

    Have you tried fried chicken with the protein isolate? OMG best fried chicken i have ever had. Marinate the chicken pieces in pickle juice over night and you have a winner winner chicken dinner.

      Highfalutin' Low Carb i took the pieces out of the brine and then beat an egg with s&p and garlic powder and poured it over to coat. Then coated with the isolate (which i also seasoned) the main thing i found was it needs to be fried pretty quick or the powder kinda disolves. When that happened i just sprinkled a bit more isolate on it and shallow fried with lard in cast iron skillet like regular fried chicken. K now i want that for dinner tonight LOL maybe with some cornbread ;)

    I'm a Yankee from NJ, and I don't like sweet corn bread either! Thanks for explaining the reason for the cast iron skillet. I always made it in a square pan, but have not tried it since going keto. BTW, my late husband used to say "corn bread should not be sweet or it would just be cake," and he was a Yankee (from NY) too! TBH, I always thought sweet corn bread must be a Southern thing, like sweet tea, so my bad! Can't wait to try this!!

    It's so nice to see a true Southerner talk about cornbread! Absolutely, no sugar in cornbread! And we always used an iron skillet with bacon grease. My Mammaw made the best cornbread and she put bacon grease in the cornbread and in the hot skillet. Her cornbread had the best crust!

    Dude! You inspired me. You mentioned mixing up some of the ingredients, so that's where I started. I'm also from the South, you're hilarious by the way. I like Mexican Cornbread. So here's my variation's ingredients, mix to your taste: Fresh fried bacon, bacon greased metal pan, oven on 350 to warm & heat the muffin tin, food process 2 jalopenos (seeds removed), 5 of the tiny corn cobs, 1 1/4 cup of almond flour, melted butter, cream cheese, baking powder, sour cream, cheddar, pimentos, bacon bits, 2 eggs, mix, spoon into bacon greased metal muffin pan, cook on 375 for 20 min, let cool. OMG. And mostly Keto! I've ordered the corn flavoring, will try that next instead of the mini corns. Thanks Dude :)

    You are 100% right! Cornbread was never supposed to be sweet! My family lived in So. California but lived on Nana's farm in West Texas. Nana would make her batter and place it in a hot cast iron skillet greased with bacon grease. When done she cut it into 10 pie wedges. It didn't rise too much so some of us would spread loads of butter on it. It was better if you cut it horizontally while hot and butter it. Butter soaked into the bread. Cornbread is to be accompanied buy fried chicken with chicken gravy, mashed potatoes, snap green beans or black eyed peas with salt pork and iced tea. The meal must be eaten on the back porch. We need to figure out how to to make TRUE cornbread!

    I bread everything in pork rinds that have been ground in a food processor

      Definitely! I used them for the topping on green bean casserole or mac n cheese with shiratake noodles. Pork rinds are magic!

      Love cornbread muffins, and I always make ‘me in a muffin pan. Cornbread is made in the cast iron skillet, and since the kids are gone, I use the 6” mini skillet.

    Crushed pork rinds seem like a crazy ingredient but I recently tried a "carnivore pancake" from seriousketo and they were amazing. I'm definitely going to try these. Thanks for all your hard work!

    I'm glad you mentioned chili, that's exactly why I'm looking up cornbread videos. Lol
    And, you're absolutely right, cornbread should not be sweet.
    I might fry that almond one. Granny called that hot water corn bread.
