- Shui Zhu Yu (水煮鱼) is one of our favourite Sichuan food. It is spicy, numbing, and savoury, a perfect dish for rainy days. Here's our recipe for how to make Shui Zhu Yu at home.
"Shui Zhu" literally translates to water boiling, which comes from the fact that the dish is finished by pouring boiling hot oil over a pile of garlic, chilies, and spices. Shui Zhu actually refers to a family of dishes that share the characteristics of numbing, spicy, umami, and served piping hot. These dishes are a perfect match with bowls of steamed rice.

Good dried chillies from China is not that spicy :D shop around and try different brands. Good chilly is purely aromatic with little heat and no slow burn
I have combined different styles including those from Wang Gang and created one of my own. But I like your approach more interesting and suitable when I want things done in a hurry
Love to see some SIchuan Mala recipes including Mala Jumbo Shrimp sauted with vegetables like bok choy and shitake mushroom. This combination is my favorite and go to when I I craving for shrimp and vegetables

so delicious! I had a similar dish with beef. The broth was so delicious! But also so oily, part of me wanted to eat it like a soup, but another one said it would have been unwise haha. Is the oil only to finish up the spices? Or maybe the point is to make the broth reusable in the ways you mentioned in the end? BTW what a sexy voice

Yep, sichuan dishes are very heavy salt and oil, but it's not like you drink the Soup ;)

The way I see it, ingredients taste different from place to place. I've even had issues with the saltiness of different salts :/ I'd experiment a few times and just taste as you go.
In future videos, I'll try to give approximations for reference, but taste as you go! My Kung Pao Chicken video has measurements, but I never measure when I cook. Vinegars as they evaporate becomes less sour. Salts will change in weight due to humidity. I always get poor results when I measure, so make sure you taste as you go!

You do not eat the broth.
you can drape a little bit over rice(maybe 2 spoonfuls for a bowl of rice) if you eat it with rice, just not too much. mix it and it will be great. but do not drink the broth
