How to make Chilli Chicken Stirfry 小煎鸡 | Spicy Juicy and Umami Chicken Stirfry | Chinese recipe
There are a few types of stirfries you tend to see in home cooking. 小煎小炒, which means stir-frying in small portions, is one of those super common techniques. Short cooking time, small portions, and flexible recipes are the name of the game.
This Chilli Chicken stirfry is one of those recipes that I cook all the time at home.
Pair this spicy, sweet, savory, and umami dish with rice, and you have a complete meal. Use seasonal veggies + chicken/pork/fish/shrimp with this exact recipe and you'll be satisfied everytime, but never bored with enough variation.
You see recipes like this in all your Chinese takeout restaurants but they taste cheap and lack textural and flavor complexity.
Welcome to Umami Complex. Real Chinese cooking.

Making You Po Mian From Scratch | Hand Pulled Noodles For Home Cooking (油泼面)

Hand-pulled noodles are an everyday staple in many parts of China and are surprisingly easy to pull off. You don't need to master the skill to arrive at a mouth-watering and textured bowl of noodles. I frankly have very little skill when working with dough, but that's never stopped me from making noodles with taste and texture that rivals many restaurants I've been to. Msg compounds my arthritis & aches. This is also coming from someone who has been cooking for decades & have cooked other international dishes. I’ve also took a culinary course. Will substitute msg w/mushroom flavoring though. Been wanting to cook more Sichuan foods. Thx
