    2 Tablespoons 큰술 Salt 소금
    2 Tablespoons 큰술 Vinegar 식초
    Soy Sauce Broth:
    5 Cup 컵 (1.2 liters) Water 물
    1/4 Cup 컵 Jin-Soy Sauce/진간장
    (Substitution: All-Purpose Soy Sauce/진간장 없다면 양조간장)
    2 Tablespoons 큰술 Korean cooking wine/mirin 미림
    2 Tablespoons 큰술 Brown Sugar/흑설탕
    4 Garlic cloves 마늘
    2 Pieces (half hand size) Dashima/dried sea-kelp 다시마
    1 Pinch Black pepper
    1/4 Medium White Onion/중간 크기 양파
    2 Scallions 쪽파
    1 Red chilli pepper 홍고추
    (Substitution: For non-spicy taste, omit or use sweet red bell pepper 맵지 않게 드시려면 파프리카를 사용하세요)

    1st recipe
    -Let eggs come to room temp for 15 mins
    - Submerge eggs in pot below waterline
    - Turn heat on high
    -2 tbsp salt and 2 tbsp vinegar
    - turn it a few times to bring yolk to center
    - Boil for 5 mins then put in ice bath for 15 mins
    - Peel eggs slowly
    Sauce
    - 5 cups water
    - half cup of Jin soy sauce
    - 2 tbsp mirin
    - 2 tbsp of black sugar
    - 2 pieces of dashima (dried seaweed aka kombu)
    - 4 garlic cloves
    - some black pepper
    - boil it for 15 mins
    - diced onions evenly
    - 2 scallions diced
    - one red chili sliced thinly no seed
    - optionally - one jalapeño
    Pour sauce over the vegs
    Add the eggs when the sauce is in room temp.
    - add sesame seeds

      I agree about Korean food being a breath of fresh air from average, usual meals!!!
      Korean food is so addicting because it tastes sooooo Amazing!!! I'm super bored with my regular meals these days, I'm always adding sesame oil/ vinegar/ brown sugar/ soy sauce in some combination just to add an extra something! to my otherwise (what I've now come to view as) Bland meals.
      E.g. I added these combos to microwaved chicken pot pie and let me say! I never had such a Deeeelicious chicken pot pie!!!

    Years ago i had one soy braised hardboiled egg in very rural Cambodia along with a chunk of pickled cucumber. Best breakfast i ever had and have always wondered how exactly they did the egg.....Now i have a good idea! Thanks Helen!

    I just wanted to thank you for this recipe and explanation. I know in the states if some food is inexplicably good and addicting, we’ll joke that it’s like crack. Thinking about it, I’m not completely sure why that’s funny.
    I made these eggs for the first time three days ago and WOW. I honestly wasn’t sure I’d like it, I don’t care for boiled or fried eggs. I prefer soft scrambled, omelet and…..steamed egg is MY FAVORITE. But I actually ENJOYED these marinated eggs. The strong egg white and yolk taste was lessened as well as that boiled egg smell was gone. I still can’t believe I liked it lol. Thank You for sharing your recipes and always sharing a story behind the food. I really love Korean food and I’ve learned a lot from your content. Our foods, why we cook it, and how…..when shared with others, it invites people in to who we are and makes our cultures accessible. I think it really makes the world smaller.
    I literally ALWAYS have in my fridge- Homemade Kimchi, or Kkakdugi, pickled veggies, and now I can add these eggs (Which my mom also enjoyed). I love cooking and I always appreciate adding something delicious to the menu.

    This looks so delicious. I’m going to make this for the kids. They love soft boiled eggs. My technique for soft boiled eggs is putting cold eggs in boiling water for 7-1/2 minutes and then ice bath.

    You got me when you showed soft boiled eggs. Subscribed~! How long will this keep in the fridge? For reference I've had salted eggs in the fridge for more than 6 months and they were still good.

    The protein in an egg is a 'complete protein', which means it contains all nine amino acids the body needs as building blocks to repair muscle, tissue as well as create hormones. These amino acids are unable to be generated by our bodies-- they need to come from diet. So many nutrients come from vegetables that are in most of our diets but our bodies absorb them so much better when they come from an egg-- that's because they're fat-soluble, meaning they dissolve best in the presence of fat, which is found in the yolk (which enhances absorption). 25% of daily selenium, around 20% of B12, 6 grams of protein in one egg, as well a lutein, zeaxanthin (for eye health) amongst so many others. There's a misconception that they raise 'bad' cholesterol if you insist on eating the yolks too but this is false (unless there's a history of familial hypercholesterolaemia). Saturated fats and super processed foods are the really bad stuff that needs monitoring and eventual eliminating from our diets. A few treats here and there aren't the end of the world. Moderation is everything isn't it? Eggs are a super food. Now with the nerd stuff out of the way can I get onto the most important information I have to share with you?

Endless fascination with ancient Chinese history. That's another long comment, suitable for the context of another type of video entirely.

    I tried this recipe today. The broth is very delicious and bursting with umami! I'm waiting for the broth to cool so I can add my perfectly cooked soft boil eggs. 😋
