      I thought that the fiber in whole wheat offsets the effect of absorption so it doesnt have such an impact as regular sugar ?
      Also...how do you feel about low carb tortilla called carb balance it's a lower carbohydrate bread. Or is it just as bad as regular ? The brand that makes it is mission", I think. Thank you for you help !

      Dr Ekberg, is it true that bread is better for you toasted, and if so in what way. Does toasting change anything about the bread and its molecular structure.

      @@lueveniapettiford2626 I'm not the doctor but the answer is Yes. Is related to advanced glycation end products. I personally don't think that external created AGE is a problem like on toast, since the conversion was done by the toaster. Problem is when you body produces them, as in diabetes.

    Sugar is one hell of a drug. One of the toughest addictions to beat, especially because it is completely socially accepted, and encouraged even... oh, and also, there's a dealer at every corner.

      I was mocked years ago for no longer taking sugar in tea... Im still partially mocked now for refusing cake and biscuits everyday. It's more socially acceptable to eat sugar than it is to not eat it

      I never noticed any withdrawals from sugar whatsoever. I kinda just stopped it completely with zero issue when I wanted to get to 130 lbs. And I ate loads of it before doing so.

      @@drekberg Exactly lot of people are aware that sugar is bad for You, but not all people realize bread is carbs as well and further that white bread is not so different from the other "healthy types" of bread available

    When I was little, as a quick snack my mother would give me a "Bread Butter and Sugar" sandwich (white bread of course.) Then to make it healthier, she cut out the butter and substituted margarine.
    I think mom was trying to kill me.

    I do appreciate how clearly the problems with bread were pointed out. I do also think that Dr. Ekberg's evaluation of bread as means for nutrition might slightly differ if he would regard bread here in Germany. Whole grain, sour dough, Einkorn are widely available. The mentioned added chemicals will not be found in any german bread.

    I am a kid of the 60's. For a sweet I used to have gobs of butter and tablespoon fulls of sugar. I don't know how I survived. I am 63 now 3 yrs of Dr. Ekberg and IF, lost 15 kilos, am perfectly fit. Much love from India. 🙂🙂🙂🙂🙂👏👏👍👍

    Bread is only bad if, as is customary today, it is made in the industrial way in factories with many additives. Here in Germany there are still artisan bakers who make bread the old way. The bread ferments for a very long time and the enzymes make it easier to digest and keep longer. This bread is definitely very healthy.

      You are soo lucky to have good artisan bakers. I don't even know where to look for good bread in the UK. I'd have a better chance of walking through a field full of rigged landmines and coming out untouched than finding a good loaf of bread here that's also affordable. I'm sick of poisons and I'm now sick of looking underweight from just halving the bread intake in just 4-5weeks. I've lost over half stone and hate the look.

      @@dancercj1491 I'm so sorry for you I live here in a small village, the nearest bakery is 70 m away. The baker learned in France and bakes a great baguette. There is also an organic farm with a bakery, where you can buy the famous "Siegerland black bread", a bread made from organic rye with sourdough, world famous!

      @@videosuchen Thanks for the response. I might ask at the wholefood shop about organic rye or just sourdough spelt. I think sourdough spelt is one of the best breads in the UK. I used to get some years ago but the woman working there screwed up my orders constantly to the point where I stopped going in the end and I could only go Sundays due to distance.
      I bet Siegerland black bread isn't an option in the UK but I will try to find out. I think limiting carbs too much won't serve me long term as I do way too much fitness (mainly due to my job, weight training and also dancing).

    I really enjoy watching your in depth videos because you present the material in such a diversely structured way; I love how you point out the varieties of dietary options whether someone is doing low carb or keto and which foods would be best suited for each; and I love how you introduce the wide range of variables or extra factors that could come into play when someone chooses to go this route or the other...
    You leave me feeling uplifted and empowered to taking back the reins of my own health and your work is structured in a way that is easy to absorb; which leads me to confidently share with others!
    I’ve basically been doing intermittent fasting and Omad for 13 years now but i never did it intentionally to lose weight or get healthier; it was just a habit that was formed from me working long hours and not caring to pack a lunch.. 😅 like you’ve said in a video about fasting “you stay busy and the hunger goes away!”
    I’m absolutely certain that those prolonged years had trained my body to become well adapted to fasting; after finding one of your videos and absorbing the information of that one and about a dozen more I mentally prepared myself to start fasting for longer periods of time as an experiment; my first one was easily managed at 30 hours and I felt that I could go longer, so a week later I did a 48 hour fast and I made sure to introduce good quality food and make sure my body was getting that star ⭐️ treatment, I ate two times in about 8 hours and then I immediately followed up with a 5 day fast with nothing but water and some salt here and there; it really wasn’t difficult at all and I was working everyday with no fatigue or any adverse affects; and when I broke my fast it was by my choice and not because I was being dominated by hunger...
    That was about three weeks ago and I can still feel the elevated energy and cognitive function that the fasting and dietary change had boosted me with..
    In the last three weeks, I’ve been furthering my knowledge about how to incorporate fasting and eating healthier foods into a lifestyle; I know people can think a little bit is good so more is better and they can find themselves going to unnecessary extremes; and that’s why; even though it was easy for me to do it, I still want to be cautious about how often I fast and I don’t want to make a routine that my body can adjust to...

    I stop sugar few years, but still sugar are in every food. Sometimes I stop to eat bread, I love bread, but gives me pain in head, I feel tired. Now I stop to eat for few months. When I stop to eat bread and I feel light, better with more energy.

    Dr. Ekberg,
    I've had pre-diabetes for 25 years. Always kept my A1C in the low 6's with my latest at 5.9
    I am doing fasting trying to lower my IR. I'm only been doing the fasting for two months, typically 12-16 hours.
    So far, lost twenty pounds, but am still on Metformin and Glipizide.
    Recently I woke up to a BG of 93. I made two plain soft boiled eggs, nothing added to them and black coffee for breakfast.
    I usually skip breakfast but did this test just to find out what eggs alone will do.
    Two hours later I checked my BG and it was 154. I was quite surprised. as eggs and bacon should not do this.
    Today I had one scrambled egg, 2 slices bacon and black coffee. My BG went from 104 to 171.
    I'm starting to get discouraged. Have you ever seen results such as this?

      Thank you Joe G. Don't be discouraged. I would just go back to skipping breakfast. The longer you go without food the more the insulin drops. Try to get your base line of fasting to 16-18 hours.

      @@joeg.6147 Try the experiment without the coffee. The coffee can raise other hormone levels that affect blood sugar.

    Thanks, as always, for the excellent teaching! :) I think most people know by now the dangers of consuming sugar, but many are in denial when it comes to bread. This video does a good job of explaining some of the problems of consuming 'modern' industrialised bread..

      Yes I totally agree Mark Chiang Mai , however when one is on the road not much choice especially in Europe. Toast , sandwiches, sweet items etc . Salads r great but in the cold weather not so appetizing.

      @@Aurora-uh9nk You are right, Aurora. It's really difficult to stay low card when you are travelling. Not to mention trying to avoid the ubiquitous foods cooked in vegetable seed oils. :( Best thing I can do in that situation is do a lot of walking and try to burn off the carbs asap. :)

    Thank you for this video. I’ve been buying whole organic grain, grinding the grains, and baking the bread myself. Whole wheat, flax & barley. I haven’t tried Einkorn, but will give it a try. I use this bread as a special treat, but not every day. I have been curious to know the reality of the health benefits. Thank you

      Thank you Tina N. I don't think there are any specific health benefits that you couldn't get from other foods, but at least there are no or few negatives. Variety of food makes life more enjoyable. Einkorn is one and Emmer is the other.

    I do enjoy watching these videos and there is a lot to learn and take in. Sometimes too much information and that can be scary or overwhelming. Making a food diary is so underrated but I think everyone should do it. Write down what you ate and how you feel the next day. This way you can keep track of what foods work for you. Everyone is different so we need different diets.

    I don't have either. I stayed away from processed foods and drink and I fast a few days a week. I feel so much better and more energy. I exercise with weight and long walk daily and not thinking about food. The quickest way to loose weight.

    I already quit sugar for almost a year now... no softdrinks/catsup/refined sugar/junk foods/fastfood etc... the only thing I cant quit is Bread..... so I am still consuming sugar... but it is also in moderation... and I am also on One meal a day life style.. fresh baked plain bread is the only pleasure I can have by the end of the day 😌

    Dr. Ekberg, I watched many of your video, and learned a lot. I try to find answer for that, if I make sourdough bred with emmer/rye flour mix without yeast( leave the dough overnight in fridge) does it lower the carbohydrate at all, or just good taste?

    Low carb, high fibre, high protein bread? As a diabetic I eat a bread mix from a health shop made from Lupin flour which comes in at 9grams of carb per 2 slices. No large blood sugar spikes when toasted and eaten with a spread of natural peanut butter.

    Can you comment on the "sourdough" bread craze? For instance, there is an infodemic of misinformation out there right now that fermented sourdough (the homemade kind that takes 48-72 hours to make) somehow bypasses all the negative aspects of wheat. Is that true? Does home-made sourdough bread still cause inflammation?
    Again for clarification, I am specifically referring to the homemade sourdough bread where a person soaks the wheat with water overnight first, then adds a starter of some kind the next day, then bakes on the third day. Give or take, 36-48 hours of fermenting.
    Also, what time of day would be the best time fo eat it?
    Lastly, should a person eat that fermented sourdough on it's own, with a protein, with a fat (butter/olive oil), with a carb (peanut butter), with a meal?

    My question is about a organic multigrain or oat bread. Dave's Killer Bread for example. Is this still a bad carbohydrate? I never eat white bread, but, I like multigrain bread with butter and honey.

    Thank you Very much for in-depth explanations about sugar and carb. Since I came across your your channel 2 weeks ago, I've been following it ever since. Never do keto diet before, but consume, low fat,stuff, lot fresh organic greens, plant base food,fruits, which I planted myself in a small. Beside exercising in the gym have personal trainer or do yoga everyday for yrs that extra pounds was stubborn.😊 Avocado is imported, it's so costly here, instead fresh coconut are easily obtained either young or old fruit. Old coconut meat, grated myself for its fresh milk, drink directly is much better than Milk. Tried keto diet following your guidelines and OMAD. Amazed that the pounds dropped.

    I like bread & I'm not sensitive to it, but I never buy store bread. I make my own with non GMO unbleached bread flour & I use other flours too including buckwheat, quinoa, millet, spelt & sometimes rye. We eat about one loaf per week, mostly at breakfast. Now that I'm doing 16-8 IF, it is much later in the morning.

    Dr. Eades has said that the Egyptians had a very heavy bread based diet and that Egyptian mummies showed signs of atherosclerosis due to their heavy bread based diet. So you have to question how healthy even ancient wheat was when heavily consumed.

      mathfaster Heavy bread based diet alone doesn’t cause atherosclerosis. They didn’t have over processed and wheat poisoned by chemicals, and pollution. Also, a few dead rich mummies don’t represent the populations health at the time.
      Common causes include:
      High cholesterol
      High blood pressure
      Inflammation, like from arthritis or lupus
      Obesity or diabetes

    When you want to eat bread, make sure you make your own. No sugar in the recipe necessary! And there's some very nice Low GI recipes out there for baking your own breads.

      @@southerngrandma4353 I make my own. I also make sourdough "cookies" for my dogs as treats. I wanted to watch this video before I made a loaf of bread today! You can make your own starter or get some from a friend. I learned how to make it on You Tube. Also I use whole wheat as my flour.

    There is no straight YES or NO answer because we are all so very different. Many people are being "educated" about general nutritional facts but that doesn't mean each person knows his/her body facts! (sensitivities, intolerance, etc..) In short, keep carbs low, burn more fat, stay away from GMO's, and try to be stress-free!. Thank you Dr. Ekberg.

    I love white bread , breakfast & snack is white bread with coffee & fresh milk w/o sugar .& starting fasting now, eat bread & eggs in the morning, 8 pm eat a few rice till 12noon, haven’t eat . It’s ok ? to reduce belly fat or IR

    I’ve learned a lot from your videos and I’m very thankful for that. But when you talk about bread I think there’s something missing. I understand that in US there is only wheat. White or whole grain makes no difference to me. It’s still just wheat. But what about other sorts of bread? As you may know, in Sweden we have the Swedish “knäckebröd” which contains no wheat at all. And then there’s bread with probably some wheat but also rye or even oats. I stopped eating bread some six months ago. But that’s the only carbs I miss. When I ate bread I preferred my own home baked with about 40% whole grain wheat, 30% rye and 30% oat. No sugar just a little salt. So how does all those sorts of bread affect things like blood sugar and insulin resistance?

    When you speak about bread, it's always about processed american bread. What about french bred ? The one who's made with natural yeast and flour of ancien wheat, non GMO. Is that also as bad as you describe what you can find in the US ?

    Hello and thank you for your so many excellent videos. I've not so long ago come across them and have a lot of viewing yet to do. Almost everything is clearly explained and always without any tediousness. Many of the numerous health questions I've had have already been answered and no doubt many others will be. One in particular is "does tasteless fresh food from the supermarket have the nutrients that richly tasting home-grown food does?". (I intend to grow of much as my own food as I can, besides.) Since viewing your video with the whiteboard headings of Osteoarthritis and Rheumatoid Arthritis, I have the question "can good nutrition reverse spinal lumbar stenosis?"(another reason to lose the visceral fat) ALL junk is off the menu now including restaurants. Nothing that comes in any sort of container is ever purchased. I've lost 24 kilograms this year and that and a bit more to lose yet. I have only lost 2.5cm measured around at the navel (currently at 52 inches) and while the weight loss surely is something I'd be a lot better off losing the visceral fat. I'm sure I will get there. 18 months ago my fasting blood sugar as measured in Australia was 6.5 - - - 5 months ago it was 5.0. Also as measured here, my LDL and HDL were 2 whole numbers out of the acceptable range. 5 months ago they were both 0.1 outside of the acceptable range. I keep myself a lot more active now and I hope to be off the blood pressure medication in good time. I'm to visit my doctor soon and arrange as many blood tests as is reasonable, more than the standard ones, certainly. At that time, I will seek referrals to see a registered dietitian or nutritionist. A few years ago I asked a dietitian if salt was worse than sugar and was informed that salt was. I'm still somewhat unsure though tend toward believing that sugar is worse. My mind has always been very active and quite sharp but now it's something else again and I am much more settled in the evenings. I consider that I was "the kid who consumed way too much red cordial". Thank you again so much for your videos. ps some of the still shots that come up when clicking your videos are so funny. All sorts of expressions such as frowning at bad foods.

    What is your take on Keto bread. One that is available to us is Franz KETO white. It has 1 net carb (after subtracting 11 fibers) Ingredients include bread base. Is this acceptable on a Keto diet when you are wanting to loose weight or break insulin resistance? Thank you for all your videos. We have learned so much from you.

    You know what's intresting about fruits? In my case apples - So with apples and well every fruit i think they have different breeds. So firstly there's the one that you can buy at the grocery store wich is pretty sweet but without much sour things in it (i mean the substances that our brain intreprets as sour). On the other hand another breed wich is what i find in any normal tree (you know the ones found in gardens) firstly i find that they're smaller, they're less sweet and more sour and flavourful. And of course i like these smaller apples because they're more balanced and i believe they're not as hybrdized as the other breed that you find at the grocery stores wich are grown in the greenhouse.

    One other positive thing I forgot to mention: my heart rate is lower now and even after a good meal that I finished eating 15minutes ago, my heart rate is 60 bpm. I had good vegetables, butternut squash and cooked salmon. 6 different vegetables (including frozen peas, as well as non frozen parsnips, carrots, cabbage, swede, and celery). The protein and more fat based meals cause my heart rate to increase on a far lower scale than bread. Even 2 pieces can cause a 15bpm increase which is definitely not good. One of the evenings a couple of weeks ago at around 2200ish, my heart rate dropped as low as 47-48!!!
    I've read theories that the heart can only deal so many beats within a person's lifetime before it gives up so I wonder if a resting heart beat under 60-65 is another indication of decent health and/or fitness???
    Also, when I go to the toilet (without being too graphic), certain turbines don't fume as bad now. If anything, just switching to "whole meal dunce bread" and cutting 98% refined sugars have by reduced flatulence and the toilet only needs an extractor fan after consuming too much plane yoghurt (which I add blackberries, blueberries and raspberries, no pun intended). I've noticed an increase in the taste of more natural foods but giving up chocolate is going to be the biggest challenge for me. I could get some raw cocoa from a farmers market though as a treat however as it isn't sweetened with sugar and it is good in not-too-high doses.
