    What’s for dinner today?
    Crusted salmon with sautéed spinach and sun-dried tomatoes. Here is the low carb & keto friendly dinner recipe for you:
    Ingredients:
    for 4 servings
    4 boneless skinless wild caught salmon fillets
    1 tbsp avocado oil
    1/2 tbsp keto friendly sweetener
    1 tsp sea salt
    1 tsp garlic dehydrated
    1 tsp lemon zest
    1 tsp thyme
    ½ tsp basil
    1 cup pork panko
    1 large eggs
    2 tbsps. sun dried tomatoes
    Sautéed spinach:
    1 ½ pounds fresh and washed spinach
    2 tablespoons avocado oil
    1 clove garlic, peeled
    Sea salt and freshly ground pepper to taste
    Keto Cauliflower Rice:
    16 ounces frozen cauliflower rice
    3 tablespoons butter or avocado oil
    2 garlic cloves, minced
    1.5 teaspoons sea salt
    1/2 teaspoon black pepper
    3/4 cup heavy cream or coconut cream
    Directions:
    Salmon:
    Preheat the oven to 400˚F. Grease a baking sheet with 1 tablespoon avocado oil. In a medium bowl, mix all spices and pork panko. In a separate medium bowl, beat the egg. Coat the salmon fillets in the egg, then the bread crumb mixture. Lay the salmon on the prepared baking sheet.
    Bake for 10-12 minutes, until the salmon is slightly golden. Switch the oven to broil and toast for 1-2 minutes until the breadcrumbs are dark golden brown.
    Sautéed spinach:
    Heat the oil in a skillet large enough to hold all the spinach. Add the spinach, garlic, salt and pepper. Cook over high heat, stirring rapidly, until the spinach is wilted and most of the moisture has evaporated. Remove the garlic.
    Keto Cauliflower Rice:
    In a skillet over medium low heat, melt the butter.
    Add the minced garlic and sauté 1 to 2 minutes until fragrant.
    Add the cauliflower rice, salt, and pepper and stir to combine.
    Add the heavy cream or coconut cream and stir to combine.
    Stirring continuously, let the mixture cook for 8 to 10 minutes until all liquid is absorbed.
    Put the salmon on the plate and serve with saluted spinach, and keto cauliflower rice. Sprinkle with sun dried tomatoes.
