This keto berry tiramisu is a perfect dessert for a 4th of July party!
Here is the recipe for you:
Ingredients:
Sponge cake:

Raspberry syrup:
4 oz frozen raspberries
ž cup water
2 tbsp lemon juice
2 tbsp keto sweetener
Filling:
8 ounces cream cheese at room temperature
â cup powdered keto sweetener
1 teaspoon vanilla extract
Âū cup chilled heavy whipping cream
Topping:
Sliced fresh strawberries and more for decoration
Fresh blueberries
1 package freeze - dried strawberries
Use serving glasses that are deep enough to contain all the layers.
Directions:
To make the sponge cake shapes:
Cut the shapes out of the sponge cake using the top of your serving glass to fit nicely on the bottom of the glass.
To make the raspberry syrup:
In a medium pan, combine frozen raspberries, water, lemon juice, and keto sweetener. Simmer on a low heat until the syrup start boiling. Cool the syrup down and blend it in the mixer until smooth consistency is reached.
To make the strawberry dust:
Place the freeze - dried strawberries into a blander and pulse until finely ground.
To make a filling:
Place the cream cheese, keto sweetener and vanilla extract in a medium bowl and beat the cheese till itâs creamy. Do not over mix using the mixer.
In a separate bowl beat the chilled heavy whipping cream until soft peaks. Then add the whipped cream into the cream cheese mixture and beat again until all ingredients are well combined. Put in the refrigerator.
How to assemble:
· Cover the bottom of your serving glass(es) with one piece of the shaped sponge cake and use a spoon to spread the raspberry syrup
· Top with a layer of the cream filling
· Cover the cream with a layer of freeze-dried strawberry powder
· Next is a layer of sliced strawberries
· Repeat with remaining layers and cover the top with the dust of the strawberry powder first and then put more fresh strawberries and blueberries on the top
· Place the tiramisu to set in the refrigerator for at least 4 hours.
