    Dairy Free Protein Bars Keto Recipe:
    You will go crazy with this mind blowing recipe! These keto protein bars are very tasty, they have super clean ingredients, they are dairy free, gluten free and very easy to make. No baking required.
    One thing I want to tell you…. if you are following ketogenic diet for weight loss, you should not eat the bars yet. These bars are very nutritious but also high in calorie. Once you reach your weight loss goal, and you are on "keto maintenance" it's OK to indulge in these bars... in moderation;)
    Here is the recipe for you:
    Ingredients:
    1 cup organic almond butter
    1/2 cup melted coconut oil
    ¼ cup powdered keto friendly sweetener or more if your protein powder is not sweetened
    1/4 tsp Himalayan salt if the almond butter is not salted
    1/3 cup water (or more)
    7oz chocolate egg white protein (or whey protein Isolate if you are not dairy free)
    Or vanilla egg white protein (or whey protein Isolate if you are not dairy free) + 1/4 cup organic cacao powder
    Topping:
    4 oz dark chocolate (only keto friendly chocolate)
    2 tbsps. melted coconut oil
    Directions:
    1. Line square baking pan or dish (8x8-inch) with a parchment paper leaving a bit of an overhang on either side for easy unmolding.
    2. Put the almond butter, melted coconut oil, keto sweetener, and Himalayan salt in the bowl and mix all ingredients till well incorporated.
    3. Add egg white protein and cacao powder (if using vanilla flavor of the protein powder) and add water, 1 tablespoon at a time and mix until the water is well incorporated. Mix well until the mixture becomes sticky.
    4. Transfer this mixture to the prepared pan; with your fingers, spread as evenly as you can all the way to the edge of the pan. Put another layer of parchment paper and smooth the top by rolling on it with a mini roller or a small jar.
    5. Place in the refrigerator while making the chocolate layer.
    6. In a microwave safe bowl melt chocolate and coconut oil (about 30 seconds or until the chocolate is melted). Then pour on top of the bar dough and spread it evenly across.
    7. Return to the refrigerator again to chill overnight.
    8. Once completely chilled, remove from the pan and cut crosswise into even bars. These bars are very crunchy, and they can chip while cutting so try to be carful.
    9. Keep refrigerated for up to a week or freeze for up to a few months.

    I would like to try this recipe for a friend on keto lifestyle. Why the egg white protein? Can I substitute for something I already have in my pantry like coconut flour or almond flour?
    This video was very helpful about chocolate being crunchy and cracking when cutting int as my bars always crack when cutting 😞...thank you! 🙂

      Thank you Melissa for your comment😃 I love sharing with people my experience with cooking and baking because it can help avoid some mistakes that I already made. These bars are protein bars and that’s why I used the egg whites powder not only for the higher protein content but also for the texture. You can also use the whey protein. I’ve never tried making bars with coconut flour or almond flour because I guess the texture will be not like a bar but more like a cake. If you like to use those flours try with almond flour not with coconut flour because coconut flour absorbs a lot of water. I hope I could help and please let me know if you make it so I can make it too 😘
