    Occasionally when I make a mug cake, I replace the egg with a heaping tablespoon of mayo...no eggy taste, adds moisture and some lift also more calories. The texture is pretty good, more like a traditional, full size cupcake. I started watching you for the recipe battles but stayed for your entertaining and brutal honesty. Not disappointed.

      @@theodosios2615Good point! No egg allergy, mayo also contains oil so it's a good substitute for eggs without the eggy taste.

      Growing up, mayonnaise cake was something my mom made fairly often. So, I think I'll try that, especially if the texture is more cake-like. Most mug cakes I've tried have a bit of a rubbery texture. Not horribly so, but definitely not a cakey texture to them.

    back when i was a mugcake making gurl, i would mix up an entire quart jar of just the dry ingredients and when i wanted to make a mugcake i would spoon out however much needed into a cup and add the wet ingredients. worked like a charm and no need to drag everything out for just one cake. and thanks for the re-inspiration!

      Keto junk food is not a recipe for long term success. The more that is learned about these sweeteners, the worse they are proven to be for us. Almond flour is also not a health food. Oxidized crap unless you pick and grind the almonds yourself.

      @@barbara5563 if you triple the recipe, take 1/3 of the mixture. it would probably be easier going by weight, just put the mug on the scale and scoop out 1/3 of the total weight and make sure you write it on the container 👍

    I always mix up 3 eggs and separate into a 6 compartment silicon cube tray. Once frozen you pop them out into a freezer bag and that half egg is all you need for a single mug cake with no eggy taste ☺ Last for a couple months in the freezer.

      That's a great idea. I was going try to get the smallest eggs available. My neighbor sells little bantam eggs. The Bantam Chickens lay a egg about half the size of a large store bought egg.

    Mix your cocoa powder with your sugar first and it will blend in beautifully. No lumps, no powder flying all over the kitchen, and no tears of frustration.

    OMG, Wes-you look amazing! I’m still in a skilled nursing facility recovering from shoulder replacement surgery. It’s not the place to be if you are trying to maintain low-carb or keto, but, I plan to be home soon and will be following keto/low-carb to the very best of my ability. Thank you so, so much for all you do! ❤

      @@HighfalutinLowCarb I had a shoulder replacement - no choice, had a bad fall, broke the top of my arm bone badly. If your father opts for this surgery, make sure he follow through with the physical therapy. It's not hard, but most people don't do it. You stick with it - and your range of motion improves - and I have great range of motion. That arm is not as strong as it was, especially, say, pulling something heavy off a high shelf (I can do it - just have to be very careful). I wish him good luck with this.
      (My shoulder is sometimes sore, but I'm very active - yardwork, firewood hauling, computer use, and so on. Overall I'm not in pain, and much of the day I have no idea I have the prosthetic shoulder (metal) in there - it just doesn't occur to me. Now, any surgery is a risk - he of course needs to pay attention to what his doctors say and not some person on the internet like me. But there is a chance - if he needs this to end arthritis pain - that it will work).

    Cocoa powder is hard to mix in because it’s hydrophobic. It’s best to either use a small amount of water to make a paste before incorporating it with liquids or to mix it with the fat into a paste. Another option is to make the batter in its entirety before adding the cocoa powder and it will mix together but there can be cocoa powder balls if it’s not mixed well.

      You can also use brewed coffee to mix the cocoa powder paste. Coffee brings out the chocolate flavor, so it's a good choice.

    Bless you Wes. You have changed our lives. I've been on a ketogenic diet for six years and now, because of you, I can eat delicious variants of all the foods we grew up with. Bought your book (which is great by the way), one of your aprons and a coffee cup to spread the word at work. You have done more to help us stay ketogenic and thusly had a more positive impact on human health than all major medical associations are research institutions. I am a research scientist with colleagues at these institutions and with due respect they are way behind the low-carb learning curve. I haven't felt this healthy and satisfied for almost fifty years (I"m 60, 6'2", 165 lbs and no inflammation). Again, bless you Wes.

    I made a mug cake based on a commenters instruction on another video and the texture was amazing.
    I tweaked it a little bit based on some ingredients, but overall the same result.
    This is what I used: 3 tbs almond flour, 1/2 tbs egg white protein powder, 1 tbs sweetener blend, 1/4 tsp BP, 1 tbs SF vanilla pudding mix, (whisk dry together).
    Wet ingredients: 1 large egg, 1 tbs vanilla extract, 1 tbs melted unsalted butter, 2 tbs sour cream and whisk. combine dry into wet slowly whisking in the dry ingredients until a smooth batter. Pour into a greased high mug and microwave 90-100 seconds depending on microwave. ( I have an low wattage Ikea microwave so mine takes almost double the time)

    1 pk keto chow, 1 egg, 1/4 t baking powder, 2T melted butter, 2 T heavy cream, 1/2 t vanilla, 3 drops stevia, Stir all at once and m.w. for 60 sec.

    I’m going to try the first mug cake. It looked the yummiest to me. When I have all the ingredients out, sometimes I’ll make two separate mug cakes. Sometimes I get out some snack bags and measure all the dry ingredients. Label the bags. Then when you want one, you just need to add the wet ingredients. Love your videos!

    I'm enjoying the recipe revamp. I've been sneaking in Now Brand liquid monk fruit sweetener to cut back on sugar. Nobody's caught on yet, hehe. I like to mix multiple mug cake dry ingredients in individual 8oz jelly jars so I don't have to drag everything out every time I want one.

    I've found that 1 tablespoon of beaten egg is enough to get the lift and texture from the egg. And I freeze the rest of the egg for next time.

    If you need a good easy dessert get some rebel ice cream. Holy moly that stuff is good. Mug cakes are so disappointing and not worth it. Just make any dessert from All day I dream about food. She’s got it figured out as far as keto desserts. Caroline’s cookbook is really worth it. She’s got it linked on her channel (all day I dream about food).

    If you mix your Cocoa with your sweetener first it mixes in so much easier. Works well for hot chocolate too

    Wes, I like the idea of your revisiting some older videos. There is a whole new generation of Keto folks and many new products out there to include. Thanks for the video.
    I don't like mug cakes...but if you take the exact same recipes, and cook them for 8 minutes in either a Dash mini bundt cake maker or a Dash egg bites maker, it changes the whole game. They are delish. I also add options from time to time, cream cheese, sour cream, pecans or walnuts. Serious Keto did a good VS comparing the two ways of cooking.

    Was dying for white cake tonight. Been on lectin free diet now for a couple of years, lost 50 lbs. Made a white cake using coconut flour, added frozen blueberries and a handful of sugar free dark chocolate baking chips.. OmG ..I’m in heaven! And I hate baking and cooking but because of successful weight control would not violate my diet.

    Great to see you back on Video again Wes! You look fantastic! I recently purchased a DASH Mini Bundt Cake maker and have discovered that mug cake recipes work really well in it. I have to increase the recipe a bit to compensate for the larger size of the cake, but it comes out much moister than when it's microwaved. I think chia seeds or flax flour can be substituted for an egg. It would be interesting to see how that worked in changing the flavor of some of these recipes.

    I usually do a batter that makes 2 mug cakes.....as I find one egg makes it quite eggy for a single.
    I had to make something that could mimic moist boxed cakes.
    in a bowl....blend
    3 tbs almond flour
    1 tsp sweetener (I blend Allulose with erythritol)
    1 tsp egg white protein
    1 tsp sugar free vanilla pudding powder
    1/4 tsp baking powder
    wet....in a bowl with lip
    1 large beaten egg
    1 tbs sour cream
    1/2 tsp vanilla
    1 tbs melted butter (use a little to grease tall cups)
    Mix wet together...gradually add dry. divide batter into two greased tall cups. (it will rise high before settling)
    microwave separately for 90 seconds each depending on microwave.
    those suckers will slip right out once slightly cooled.
    it can keep in the freezer once cooled.
    **** i usualy make whip cream in my nutribullet and dice strawberries with a pinch of sweetener. cut cakes in layers with berries and cream in and on top.
    Makes a great trifle with strawberry jelly, sugar free pudding and whip cream.

    Holy cow Wes, you look fabulous……not that you weren’t a cheeky lad before! The format on updated recipes is great. I’ve done Keto for years & just finished a 90 day Carnivore challenge over the holidays. Seems brown butter bites are the new thing so maybe make a couple batches using different flavorings (cinnamon, peppermint, almond etc).

    Allulose isn't interchangeable with erythritol based sweeteners in every recipe. It burns fast and makes baked goods moist to the point of wet mush or soft crumbly mess if you use too much.

    I don't experience the eggy flavor in things, I do experience the eggy texture, for example, I hate quiche or baked egg cups. My understanding is what causes the eggy flavor is the yolk. Possibly try replacing a whole egg with carton egg whites (or find recipes that use up the yolk(s). One whole large egg is 3 Tbs, 2 of those are the egg white and 1 is the yolk. So, if one wanted to replace a whole egg with just egg whites, try using 3 Tbs of white, or just have it less lofty and use 2 Tbs of egg white.

    Thanks for the new comparison! I'm glad there is a coconut flour version for the first cake since those of us with problems with nuts would otherwise be out of luck. I do like (and very much need) the inherent portion control of mug cakes. These recipes use the ingredients of old so it not surprising you encountered many of the same issues. As you know you are not a fan of inappropriately eggy things, please look for recipes that use only egg whites for lift - as I have gotten there too with regards to eggs in terms of taste and texture! It would be great to really test recipes that use more recently embraced/available ingredients like allulose, lupin flour, egg white powder, tara gum, acacia fiber, glucomannan, inulin with yeast/proofing, and different protein powders (whey, casein, plant).

    i mix my cake dry ingredients in a large batch and only have to add butter & egg per cake in the mug as i make it. that def avoids the dreaded work of pulling things out for a tiny little cake. works great.

    Using powdered butter and powdered vanilla, I have made Jennifer Banz' chocolate mug cake recipe into little bags for stocking stuffers. I think it needs 2T of cocoa powder, at least using the brand I have, which is Anthony's raw cocoa powder. I also add a 1/4 tsp of expresso powder or instant coffee for richness. They turn out great - all the recipient has to do is add the egg and maybe a teaspoon of water, mix, microwave!

    Instead of a whole egg I replace it with 3 Tbsp liquid egg whites which so whisk a bit. It gives the mug cake the lift and fluffiness the egg brings to the party WITHOUT the egg yolky taste. Hope you try it sometime .

    Really liked the eggless mug cake/brownie. Not sure if you noticed about 3/4 down in the article for this recipe she called it a mug cake/brownie. I tweeked it a bit, used heavy cream instead of almond milk, and added 3/4 tbsp soft butter to keep it from drying out while cooking. It was gooey and I added heavy cream after cooking and it was delicious. I'm definitely not a fan of almond flour, so next time I'll try coconut flour.

    As an older baker from way back, first mix all dry ingredients together.
    Whip the eggs and then slowly whip in the melted butter. Then combine together.

    I like using egg yolk only for a less spongy, eggy cake. I also like using sweetener blends like the Truvia baking blend as I noticed my favourite treats (like Russell Stover no sugar added) had multiple sweetners.

    I just made the chocolate without the chocolate chips. Hands down, this is the best mug cake I've ever eaten!!!!

    I just pulled my first mug cake ever and I used Victoria’s Keto Kitchen mug cake recipe as well as her perfected keto flour. It’s cooling now but I could smell the egg as soon as I pulled it out of the microwave. So next time I will try a tablespoon of mayonnaise instead of the egg as a poster commented below. That said, if you use Victoria’s keto flour, it is super quick as it only requires 3 additional ingredients (baking powder, sweetener and vanilla extract) and it took less than 5 minutes to make.

    For somebody who has a sweet tooth and wants to eat mug cakes I could suggest taking out all these ingredients and pre mixing your dry ingredients in say a small bowl with a cover like a condiment cup that you take along with you and this way when you're ready for a mug cake we got to do is dump in the Ramekin and add your egg milk or whatever liquids you got to add to it and you're good to go because having a drag all those ingredients out every time you want a mug cake is a lot of work in my opinion and I have done it

    I made the one by Jennifer with Zero Sugar Peanut Butter. I used Bocha Sweet. If I didn't know any better I would have thought I was cheating. It was out of this world. Loved this video. I also tried mug cakes years ago and they were a huge let down.
