Homemade Shake And Bake For Chicken Or Pork

  • A great recipe that tastes just like the commercial mix but no unhealthy stuff. This mix is one of the "Cottage Food" products I will sell at the Farmer's Market.
    Homemade Shake 'n Bake Mix Recipe
    3 cups dry bread crumbs
    1 Tablespoon salt
    1 Tablespoon paprika
    1 Tablespoon onion powder
    2 teaspoons sugar
    1 teaspoon garlic powder
    1 teaspoon black pepper, ground
    1/2 teaspoon dried parsley
    1/2 teaspoon dried oregano
    1/2 teaspoon dried basil
    1/4 cup vegetable oil (I used olive oil & coconut oil)
    Mix dry ingredients together in a large bowl. Add oil and stir until it is evenly incorporated into the crumbs with no clumps.
    Use approximately 1 cup of mixture to coat 4 thighs or drumsticks, or about 8 tenders, or 4 pork chops. Store remaining mixture in a jar in the pantry or vaccuum pack it. Use within 2 months.
    To bake: Preheat oven to 400 degrees F. Put one cup of mixture into a shallow pan or plastic bag and dredge chicken pieces or pork chops in it. Place coated pieces in a baking dish and bake, uncovered until done. Baking time will vary with pork or chicken, size of pieces and whether the chicken has bones:
    Legs or thighs with bone: 40 to 45 minutes (test with a fork at meatiest part)
    Tenders or boneless thighs: 20 to 30 minutes, depending on size and thickness of pieces
    Pork Chops: 25 to 30 minutes, depending on thickness.

    Thank You Pecan Corner! Gave me a great guideline to start & experiment with. I used about half these measurements, with half breadcrumbs and half bacon flavored wheat crisps. It looks and smells great, and tastes even better.

We think chicken fat is healthy in moderation for us - the main thing we try to do is remove artificial, soy, and other additives. Thanks for commenting!     You lost me at the 1/4 cup of oil mixture into the crumbs, but I can see how it would truly enhance the coating mix. Very interesting and thanks for sharing.

      +MrGtoriginal Not the thing for low fat diets, in which case you might try omitting the oil, dipping the chicken in buttermilk then rolling in the crumbs. If you try an alternative I would love to hear how it turns out! We all have to kind of play it by ear when it comes to food! Many people are deliberately adding coconut oil, olive oil, pecan oil, to their diets as daily supplements for certain health benefits. Per piece or chop, the oil content would probably work out to about a teaspoon or two. Thanks for commenting! :-) Tina

      willow tassie-prepper we are big fans of sweet paprika. When I was growing up, the only thing the family used it for was to sprinkle on deviled eggs and potato salad, but I use it a lot more often now. I just made a fresh batch of this today for the Farmer's Market which starts on Saturday.

    What a great ideal. Do you just set the bread out to harden? I think of toasted, when I think of bread crumbs.

      I just leave it out until it is dry, or if there are several pieces I might preheat the oven, turn if off, and put the bread in there with the oven door ajar and leave it overnight. There are lots of ways to do it but that is what I have always done. Most of the time I can save up enough that I don't have to buy crumbs. :-) Tina

    I'm going to try this , If you leave the oil out till just before you use it the shelf life should be even longer no ?

    How can you save the shake and bake mix after you had raw chicken in it? You have to save it first if you think you have extra.

      Hi, no it would not be safe to save it after the chicken has been in it. Better to throw the leftover out, and try using less the next time. :-)

      No, unless you want to line the pan with aluminum foil to make cleanup easier. All the seasonings are on the chicken with the coating, so nothing needs to be added to the pan for that. :-)

      Hi, I think egg batters for chicken are only used, sometimes, when deep frying, so they will crisp up. Since this one is baked, it is important for the coating to be dry, or moistened only with oil, so that it will be crispy! Thank you for watching. Love your user name!     Why not just mix up all of the dry ingredients and keep in an airtight container, then take out what you need, then add a little oil to it?

      Pecan Corner I tried it, it worked just fine. I used 1/2 C for some pork chops, I added a tablespoon plus a tsp of grapeseed oil and it work great. So I keep the dry mixture in my pantry in a mason jar. Without the oil it will last longer and no need to refrigerate.

      This is sweet Hungarian Paprika, for the lovely flavor. Have to be sure it is a Sweet paprika, and not the hot kind or smoked. :-) Tina

    Great recipe but if you are trying to eat healthy you need to cut off a bunch of that skin, a little is a treat but my arteries are getting clogged just looking at it :)

    I don't want to sound mean or cruel, but your recipe is wrong on so many fronts.where a Shake n Bake clone is concerned. No salt, pepper, or sage, and WHY would you mix oil into your crumbs??
